Homemade French Salad

Hello, chefs! 😋

New Year Holidays are over and we're back to our old ways of doing things.
There was plenty of food for the New Year's Eve dinner, and here I'll present one dish that we traditionally prepare at home for the holidays.

It's, as the title suggests, a French salad, a rather calorie-dense meatless dish, not to be missed for New Year's Eve dinner in our home. We usually prepare a large quantity of it and eat it as a side dish to other dishes.

To make a homemade French salad we need:

  • pickled cucumbers
  • hard-boiled eggs
  • boiled potatoes
  • boiled carrots
  • boiled peas
  • mayonnaise
  • mustard
  • lemon
  • salt and pepper
  • olive oil

I've only listed the ingredients here, not the quantities, which depend on your taste, some people like more potatoes and mayonnaise, others like pickles, etc... if you give roughly the same amount of everything you'll be fine.
It would be best if everything was your own home-grown products, but in the modern world, that's already difficult.

We bought mayonnaise (you could also make it with eggs from local hens but they have to be very fresh, we didn't have any because we used them in baking), carrots (this year was more of a bad carrot harvest) and mustard, which we never make at home.

Moving on to the recipe, first cook the potatoes, eggs, carrots, and peas.
The pickles don't need to be cooked :)
Then cut all the ingredients into smaller, roughly equal pieces.

This cutting is the most time-consuming part of the preparation. 😁
Finally, I cut everything.

Now put all the prepared ingredients in one large bowl and mix all the vegetables.

The key ingredient for the French salad is still missing.
This is the dressing sauce, which is made from mayonnaise, mustard, and lemon.

Let's say, on the eye, five large spoonfuls of mayonnaise, one teaspoon of mustard, and a squeeze of one lemon.
Salt and pepper to taste, add a tablespoon of olive oil if necessary, stir and pour over the vegetables.

That's it!
French salad prepared in this way can keep in the fridge for up to five days. We serve it as a side dish with other dishes.
