Marble Banana Muffin

Hi food buddies here in hive!
Today I will share another snack recipe that the kids will surely love, this muffin can also be included in your kid's party food list. This is an ordinary banana muffin but let's make some marble effect at the top to make it more appetizing.

Here are the ingredients:

•200g White Sugar
•50g Brown Sugar
•125mL Vegetable Oil
•1 Whole Egg
•125mL Butttermilk (1/2 teaspoon vinegar + fresh milk to make 125mL)
•1 teaspoon vanilla/banana essence
•180g All Purpose Flour
•1 teaspoon Baking Powder
•1 teaspoon Baking Soda
•1/2 teaspoon Salt
• 1/2 Cup Mashed Over ripe Banana
•1 Tablespoon Cocoa Powder

•16-18 pieces Cupcake liners

Let's get started!

In a bowl, add white and brown sugar, egg and vegetable oil. Mix well until combined. Add vanilla/banana essence.

Pour buttermilk then mix.

In a separate bowl, mix flour, baking soda, baking powder and salt. Mix it well and sieve.
Add this dry ingredients to the wet ingredients and mix until everything is well combined. Do not over mix.

I used Bungulan Banana but Lakatan can also be used. Mix it to the mixture.

Separate 3/4 Cup of the batter then add 1 Tablespoon cocoa powder, mix well until no lumps of cocoa powder. Pour it inside a pipibg bag or any plastic that can be used to pipe it out.

Put cupcake liners to cupcake tray, I pour 3 Tablespoon for each muffin.

Pipe two line at the top of cupcake using our chocolate batter. To make marble effect, take a toothpick and swirl it or move it up and down a few times.

Bake the muffin in a pre-heat oven at 300°F for 25-30 minutes. Do a toothpick test at 25 minutes to ensure the moist of the muffin because too much baking can make the muffin dry.

After baking it let it cool for at least 5 minutes at the muffin tray then let it completely cool to a cooling rack.

Our marble banana muffin is now ready.
Serve to kids with milk or coffee for adults.
