Cowboy Steak with Parsley Sauce
2.25 pounds thick cut Cowboy Steak
Pat your steak dry with a paper towel.
Rub with oil, salt, coffee rub, garlic powder.
Sear on the grill on medium/high heat for 5 minutes each side.
Transfer the steak in a baking dish, cover with foil and bake at 400F for 30 minutes.
Blend in the food processor 1 medium bunch of parsley, 4 garlic cloves, 5 tbs olive oil, 2 tbs lemon juice, a pinch of red pepper flakes, 1/2 teaspoon salt.
Rest your steak for 5 minutes, slice it against the grain and enjoy it with the delicious parsley sauce.
