A delicious Brisket recipe

For a 3 1/2 pound Second Cut Brisket
Rinse your brisket with cold water and pat it dry.
Slice 1 large onion and spread it at the bottom of a large baking dish.
Sprinkle some salt and pepper and place the meat in the baking dish.
In a medium cup, combine 1/3 cup olive oil, 1/3 cup soy sauce, 1 teaspoon rosemary (I used dry), 4 minced garlic cloves, 1/2 teaspoon paprika.
Mix well and pour this mixture on the meat.
Cover with foil and bake at 350F for 1 hour.

Then take it out from the oven, add 1/2 cup orange juice and about 4 tbs of barbecue sauce. Spread it well on the meat.
Add 3 large chopped carrots and 4 chopped celery stalks.
Cover again and cook for 1 more hour, baste it with the juices, cook 1 more hour.
Take the meat out and slice it on a cutting board, against the grain.

Put the meat back in the baking dish, cover and bake for 1 more hour.
Total baking time is 4 hours.
Serve it on a large plate and put all the vegetables around it.
Pour some of the juices on top
