CUCUMBER TZATZIKI 2.0 : For the pleasure of our vegetarian guests!!!

In my restaurant, from time to time, we get the visit of vegetarians...

And very often we are kinda get panic when we get someone vegetarian eating and we are mainly cooking chicken/beef/lamb/seafood/fish...

But since the beginning of this year, we have implemented couple fo vegetarian dishes on our menu offerings so that we let the veg also get some choices...

One among the most famous dish that me and my chef created recently is the classic Tzatziki...we worked together to make Tzatziki 2.0!!!

CUCUMBER TZATZIKI 2.0

Tzatziki is a classic food and here we tried to add our little touch to it and make it a little bit attractive - Hope you like it!

From our guests feedback...this dish is super delicious and pleasure to eat!


Ingredients List

  • Cucumber / Tomato / Apple / Garlic / Starfruit
  • Lettuces / Mint / Yogurt / Olive Oil / Gherkins


We cut the white cucumber in small brunoise and season with salt - this is to extract the maximum of water from the cucumber.

Then finely chopped the garlic and cut some fresh mint leaves.

After 10 minutes, squeeze the cucumbers to take off maximum of water from it!

Then add the yogurt, garlic, mint and olive oil - Mix everything well together, check the seasoning!


Slice the green cucumbers as you can see in the below photo!

And prepare the rest of the garnishes that will go on the plate!


Let's plate it!!!

We made some cannelloni with the sliced cucumbers and stuffed them with some of the tzatziki...



Place the remaining cucumber tzatziki at the bottom of the serving plate...


Then delicately put the cannelloni on top of the tzatziki.




Then add on the rest of the garnishes...we do it freestyle at my restaurant until we are satisfied with the presentation...

Just before serving this dish, you just need to add some virgin olive oil and rock salt on top - perfect salad!

We really had a lot of fun plating this dish - not always easy to make a tzatziki looks nice!
