Apples Carpaccio and Salad with Greek Yogurt - Outstanding dish from my Restaurant and Chef!!!

Some weeks back, the chef who works together with me in my restaurant created this dish...mainly based on apples!!!

After working on it for couple of days and after some fine tuning and advise from me...this is how the plate came out to be...

I'll briefly explain what's in this beautiful plate - It is a light dessert to be enjoyed well chilled!


Apples Carpaccio and Salad with Greek Yogurt


Ingredients used to make this dish

  • Green and Red Apples
  • Brown Sugar
  • Cinnamon Stick
  • Cardamom
  • Greek Yogurt
  • Cherry in Syrup
  • Watercress and Fresh Mint


This plate was built up from only these basic ingredients, I can assure you that it was indeed such a refreshing and amazing plate!

Everyone who tasted it was overwhelmed!

A syrup is made with the sugar, cinnamon, cardamom and water. Let it boil and keep aside.


The apples cores were taken off and the apples were cut into fine slices!



The thin slices of apples were put back in the boiling syrup and let cook for a minute until softened!



Then with the small pieces of apples, that were left over while slicing, a salad is made!

Add some Greek Yogurt and finely cut cherries, mint leaves to the apple brunoise + drops of fresh lemon juice! You can add little honey if you wish!


Plating

This is where it becomes more interesting...

Then in the middle, the apples salad is dressed neatly...



And finally with a small tweezer...carefully and delicately place mint, water cress etc... to complete the dish!



This apple carpaccio is served with the syrup on the side which we just have to pour on the carpaccio before eating!
