These days if you go to any small vegetables market here in Mauritius...you will see so many varieties of vegetables...
We are nearing the end of winter and in matter of days we will be in summer...in fact the temperatures we are having these days is perfect for veggies in general...
Over 95% of the vegetables you get these days are all local...looks like many people have turned back to plantation specially with this Covid19 situation!
This is simply great as we consumers get more to choose from and the price also is very competitive!
For a chef or a foodie...having so many varieties of vegetables to choose from is just like a dream come true...
Whenever I see so many fresh vegetables in front of me...I start having so many recipe ideas popping in my head!!!
We all need to enjoy the moment and use maximum of these beauties...as once we will be in full summer...vegetables will be rare on the stalls and very expensive too!
I usually use different methods to preserve the yummiest vegetables...like pickling, grilling, bottling and even freezing!
