SPICY TOMATO SOUP - A CHILDHOOD MEMORY

Hello Foodie Bees !

I must say i am not a big fan of Soup, but this one is something different. This is definitely my favorite soup ever. The one and only !

As i kid i always hated soups, but one time in DisneyWorld (lol) my parents made me try a tomato soup, and somehow that was just incredible, I loved it. Since then i tried many and many recipes with my family until we find that perfect one. After a few tries, we managed to get it, and man... i was happy that day.
So i decided to share this one with you all, hope you enjoy it !

Ingredients :

This recipe prepares 4 portions !

  • 1 tablespoon of minced garlic paste.
  • 1 large chopped onion.
  • 2 tablespoons of olive oil.
  • 1 cup of chicken stock.
  • 200g of heavy cream.
  • 2 cans os peeled tomatoes (800g total)
  • 1 tablespoon of sugar.
  • 1/4 tablespoon of oregano.
  • 2 tea spoons of red pepper flakes. (you can use 1 or none if you don't like spicy food, you can also use basil if you prefer)
  • salt and pepper to taste.
  • One round italian bread (it will be used as a bowl, so you can choose the size you want)
  • Butter (for the bread)

HOW TO DO (STEP-BY-STEP) :

STEP 1 :

First prepare the chicken stock. I used 300ml of water for 1 chicken stock tablet. It take about 10 minutes to get ready in a low simmer.


STEP 2 :

While you wait for the chicken stock, you can start chopping the onion, the whole onion will be used. you can also cut into smaller pieces. Don't mind the size too much, as you will be using the blender later. Use a better knife then i did. lol.

STEP 3 :

Using a different pot, this time choose a heavy bottomed pot.
First you will ad the olive oil and the garlic paste. Saute it for about a minute, then add the chopped onions. You will let it cook for about 10 minutes, or until the onion starts to get transparent. This is the right point !

When it gets to that, add the 2 cans of peeled tomatoes.

STEP 4 :

After well mixed, stir and let it cook for about 5 minutes.

STEP 5 :

Now you will add the chicken stock ! all of it !

STEP 6 :

Add the sugar, this will be used for decreasing acidity of the tomatoes. It won't make your soup sweet, don't worry !

STEP 7 :

Add the heavy cream ! I use the whole 200g because i like it creamy !

STEP 8 :

After mixing the heavy cream transfer it into the blender. Add the 2 teaspoons of red pepper, and start blending ! I usually blend it for about 8-10 minutes. You must do it until there is no chuncks left.

STEP 9 :

Pour it back into the pot, add salt and pepper to taste. This is the time to adjust any missing flavour, from salt or pepper.

Turn the stove on for a few minutes until it gets hot, you will see some smoke comming out of it !

Your Soup is ready !


BREAD PREPARATION :

Now if you want to go one step further you can eat your soup out of a bread bowl ! i really enjoy doing it this way, since the first i eat it was served like this, and i loved it !

STEP 1 :

Cut just the top of the bread. Literally the top only, so you can easily cut out the bread inside. Take it all off. Now you have your bowl ! I ended up eating the removed part with butter while i was cooking =[

STEP 2 :

Melt 2 tablespoons of butter and add half tablespoon of garlic, mix it all and spread on your bread inside out !

STEP 3 :

It will look like this !

STEP 4 :

Take it to the oven for a few minutes. You don't want to burn it, you just want to make it a little more crunchy and hot ! About 4-5 minutes in 200° c should be enough.

STEP 5 :

Serve the hot soup into the bread bowlm and enjoy !

After eating most of the soup in the bread, i start dipping the rest of the bread of the bowl into the soup, and man it is good !

You can add some cheese or even basil before start eating. But i prefer just to eat it this way.
