The degree of complexity when making it is 6/10, since the most difficult thing is to make the pineapple not to stick to the tray and the final result is beautiful, otherwise, it is a complete disaster even though the flavor is very good. To achieve the result that you can see today, I have had my frustrations many times but here I will give you the tips to make your cake win the prize and get all the compliments.

We will need 1 cup of white sugar and ⅛ cup of water, this we will place it in the aluminum container that you are going to make the cake and put it on the stove over low heat, important, you should never stir and the container must be completely dry.

The caramel will last a couple of minutes, until you begin to see a light brown color on the edges.

When you observe this color, with the help of a glove take the container and make circular movements (do not introduce a paddle or spoon because this can cause the caramel to crystallize) little by little, the caramel will take darker color until it reaches the indicated point which should be an intermediate brown color, I recommend you not to take your eyes off the caramel, because, in a few seconds it can burn and there will be no turning back, you will have to start again and you will have lost the sugar and maybe your patience.

When it is at the indicated point, remove from the heat and spread the caramel all around the edges, at this point you must be very careful because it is very easy to burn yourself; reserve the caramel until it cools completely.

While the caramel cools, we chop the pineapple, I particularly love this presentation of the pineapple in squares, because it is different and when eating it you feel these soft and sweet pieces impregnated with caramel. Once they are all chopped, place them in the bottom part of the container that already has the caramel (important it must be completely cold), this will prevent the pineapple from sticking.

At this point, we begin to make the cake mixture, in this case it is a soft and simple sponge cake.

Ingredients

  • 3 eggs (separating whites and yolks)
  • 2 cup wheat flour
  • 2 ½ teaspoon baking powder
  • 1 cup sugar
  • 1 teaspoon vanilla essence
  • 165 gr of oil
  • 240 ml of liquid milk
  • Ingredientes

  • 3 huevos (separando claras y yemas)
  • 2 taza de harina de trigo
  • 2 ½ cucharadita de polvo para hornear
  • 1 taza de azúcar
  • 1 cucharadita de esencia de vainilla
  • 165 gr de aceite
  • 240 ml de leche líquida

  • We begin by separating the yolks from the egg whites. Once we have separated them and with the help of a mixer, we beat the egg whites until stiff peaks.

Add the sugar and beat until it is completely integrated, add the eggs one by one, and continue mixing.

Then add oil and vanilla, mix and begin to add the milk and flour alternately, always mixing gently, at this point our mixture will be ready to bake.

We will place our cake in a preheated oven at 180° C for approximately 40 minutes, until it is perfectly cooked.

When removing the cake from the oven it should be unmolded immediately, otherwise the caramel will harden and stick to the bottom of the container all the pineapple, we must do it with great care and caution to have the desired result.
