- Freegan intro, how to find food in trash cans.
Regularly with @deepresearch we go behind numerous markets, and search through their trash cans for still good food, that did not sell.
In Poland where we live, best ones to check are 'Dino' and 'Biedronka' - because this are only companies that mostly leave trashcans open.
I specially recommend Dino, because Biedronka sometimes closes trash cans with a lock.
Higher chances to finding good food is right after market closes, because its the time workers throw out "trash". When You see closed bags- light ones contain literally trash, search for heavy ones and open.
Our last trip gathered this:

Because of carrot quantity 👉 me and my flatmate Marysia (professional cook) made brainstorm what to do with those carrots. Tomorrow I will write about next ideas we had - how to make pickled carrot🥕 and carrot pie 🥕
Also we had a lot of paprika 🌶️, that gave me idea for paprika mayonnaise-like.

- Pate recipe, step by step
First I cleaned thoroughly carrots and cabbage and chopped them - to fasten up baking process and put to oven for around 30minutes. The cabbage smell was amazing 😍
Some ingredients I needed, like spices, lentils, and millet had at home.
Next I took red and green lentils to one pot, and millet to other.
Lentils took around 15minutes to be ready, and about 10-13 for millet.
Be careful to not overcook millet - because later it will act as a 'glue' like eggs, or flower for our pate. Overcooked millet don't have that quality.
When carrots and cabbage was done in the oven, mixed them with lentils and millet. Added onion and garlic, blended better than on picture below, but forgot to make another picture when finished blending 🙄
I added salt, and some spices. Add them slowly, because with some like smoked, or spicy paprika its easy to overdo and make it hard o eat ☣️
Spices are up to taste. In Poland we tend to use a lot of them, but without them Your pate also will be delicious 🆗.
I used smoked paprika, spicy paprika, sweet paprika, coriander, cumin, rosemary, thyme and a lot of nigella (polish "czarnuszka", not sure did I translate it correctly).
Later I used some baking paper, so later taking out of container would be easy.
Next put it back to oven for about 30minutes.
- Paprika mayo-like recipe 🌶️
Put paprika to oven for 20 minutes, and blend it with oil, some spices if you want. Its done!
On a plate we have bread, that Marysia baked today and some lettuce ❤️.
