Egg Coated Fried Yam Recipe || Popularly Known As Yamarita In My Region

I enjoy eating yam a lot, and it can be prepared in a variety of ways. Few day ago I posted my special yam and egg sauce recipe, This is one of the many ways to enjoy yam. You can cook yam in a variety of ways, including boiling, roasting, pounding, and frying.

Today’s blog I’ll be frying my yam but this time in a unique way. Why did I say unique?

The Egg Coated Fried Yam popularly known as Yamarita was made by boiling the yams and then coating them in a seasoned egg mixture, then deep fried with flour but I made sure I added pepper to the egg mixture for flavor, but you don't have to (optional). This yamarita was served with Fried Stew, but you can serve it with whatever side you like.

The Ingredients

  • Yam (1 tubber)

  • 4 Eggs

  • Flour

  • Red Pepper (Sliced)

  • Ugu leaf

  • Vegetable Oil

  • Blended Pepper for the fried stew

  • Salt and Maggi

Step 1: Slice the yam into rounds, then peel and cut into other shapes as desired, In a clean pot, add the sliced yam and water, season with salt, and begin to boil. When you pierce the yam with a fork and it goes in easily, it is done. Drain or remove the yam from the water once it is done.


Step 2: Crack the eggs in a small bowl, add the Ugu leaf and sliced pepper, add Maggi and salt to taste then whisk together. Place a sauce pan on a low medium heat and pre-heat the vegetable oil for 3 minutes.


Step 3: Now coat the yam in the egg and Ugu leaf mixture first, the proceed by coating with the flour.


Step 4: Gently deep fry the coated yam until golden brown, repeat for all the yams.


Turn off the heat after you have finish frying all the yam, serve and enjoy

I served with fried stew, like I stated earlier you can enjoy with any dish of your choice. Fried eggs or even eat it as snacks
