Place the rest of the dressing on top of the whole piece of meat and wrap with envoplast for 1 hour.
Meanwhile, grate the tomatoes and onion and cut the peppers into thin strips, reserve in the refrigerator.

When one hour has elapsed, drain the piece of meat very well, and in a pot with hot oil fry on all sides, making sure that the piece is well sealed and browned.

After browning and searing the next step is to add two tablespoons of sugar, stir and before it begins to caramelize, add the reserved grated seasonings, sauté and add 1/2 jar of water. Cover and let it cook for 1 hour.

At the end of 1 hour, remove the piece of meat and slice as shown in the picture. Place the slices in the sauce again and leave on the fire for 15 to 20 minutes so that the slices finish absorbing the flavor of the sauce. Remove from heat.

This is one of the most emblematic meat dishes of the Caracas family tradition. Serve with white rice and toasted bread with garlic and parsley, or if you prefer to accompany it with something fresher like a salad of your preference and fried plantains in slices.
