Sourdough pizza πŸ•πŸ•πŸ•

Pizza is one of my favourite foods. That kind of food that I could eat everyday, but I wouldn't get tired of. It is true that you can practically find pizza restaurants on every corner but in my opinion, no one beats the Italian masters of pizza making. Traveling through Italy I’ve tried different toppings, from classic mozzarella and tomato with fresh basil, to more β€œunusual” like the zucchini flowers or my favourite mortadella, mascarpone cheese and pistachio.

On rainy days like today, we have enough time to make our sourdough pizza at home and I’m glade to share the recipe with you.

Ingredients for 2 pizzas:

  • 240 g of manitoba flour, plus for dusting
  • 150 g of water
  • 7 g of olive oil
  • 100 g of active sourdough starter
  • 3 g of salt

In the mixing bowl combine the water, olive oil, and flour. Mix them well.
Cover the mixture and let it rest for 30 minutes.

In the next step add the active sourdough starter and sea salt and knead it into a homogeneous mixture.

Place the dough in a lightly oiled bowl. Close/cover the bowl and leave the dough rest for about 5 hours at room temperature.

Divide the dough into two parts and shape the dough parts into two balls.

Put the two doughs on a tray or in a bigger container (dusted with flour), cover it with a cloth and transfer to refrigerator for about 24 hours.

After 24 hours, lightly dust a work surface with flour, stretch the dough in round pizza shape and leave it to rest for 20 minutes.

In the meantime, preheat the oven to the highest temperature. I preheated it for at least 20 minutes.

After 20 minutes of resting, add your favourite toppings. I’ve added the tomato sauce, mozzarella cheese and some baked prosciutto.

Bake the pizza for about 5 – 8 minutes. You can bake it on a baking tray with baking paper or on an appropriate baking stone surface.

When making pizza at home we prefer simple toppings like tomato and mozzarella with fresh basil. What is your favourite pizza topping?
