Arepa is a food that takes us to every home. As they say it goes with everything and is often used as breakfast, lunch (to accompany) and dinner. With cheese, ham, eggs, butter with whatever accompaniment you have at home and we also manage when we do not have.
The nourished arepas in my home were born when for reasons that do not come to the case we were not consuming many nutrients, so the housewives to supply certain foods and also yield what they had, began to yield the flour of the arepas with carrots and zucchini as is the case that I present today.
Another reason, to nourish them for the taste of the precooked flours that were found in the market, not at all pleasant.
For the preparation of this dough we used carrots, zucchini, salt and pre-cooked corn flour.
The carrot and zucchini are grated.
Once the zucchini and carrot are ready, add the pre-cooked corn flour. Salt, to taste. Begin to knead and if it is not necessary to add water, do not do it, in this case only a little, very little was used. The zucchini does its work for the unification of the ingredients.
This is how the dough should be. Very soft and smooth.
Now, to assemble the arepas.
Already assembled on the hot griddle, the flame not high so that they cook slowly and do not suffer that they overcook and get to burn.
Once the arepas are cooked, they are ready for breakfast. Here they were accompanied with a stewed tuna that was in the refrigerator.
They are very delicious.
