Hoy me encuentro sumamente feliz porque al fin ha llegado el turno de que una de mis comunidades favoritas sea destacada en el Concurso de Impulso Comunitario de #OCD y como yo soy fiel amante de la comida no podía dejar de participar y compartir con toda la comunidad uno de los platillos más deliciosos que tiene la Gastronomía Venezolana.

Today I am extremely happy because it is finally the turn of one of my favorite communities to be featured in the Impulso Comunitario Contest of #OCD and as I am a faithful food lover I could not fail to participate and share with the whole community one of the most delicious dishes that has the Venezuelan gastronomy.

Antes de comenzar, debo decir que la gastronomía de mi país se caracteriza enormemente por ser muy colorida y atractiva a la vista además de que es considerada como una de las más variadas en el mundo, producto del gran mestizaje que ocurrió en la época colonial. En aquel tiempo, la gastronomía de los indígenas que poblaba el actual territorio Venezolano comenzó a fusionarse con las tradiciones gastronómicas Europeas y Africanas y es entonces, a partir de aquí, que la cocina venezolana fue evolucionando y desarrollando una amplia gama de aromas, sabores y colores ya que con la llegada de nuevas razas y tradiciones también llegaron nuevos alimentos y “técnicas culinarias” que con el pasar del tiempo se volvieron características y tradicionales en nuestro territorio.

Por otra parte, es muy normal que cada vez que en nuestro país se hable de un platillo en particular, lo asociemos a una región específica del país o a una época festiva del año y me atrevo a decir que es por eso que a muchos se nos hace difícil escoger a un solo platillo como nuestro favorito entre tantos platillos excelentes que tenemos. Probablemente si le llegaras a preguntar a un Venezolano que se encuentre en el extranjero, ¿cuál es la comida que más extraña de Venezuela? Con completa y absoluta seguridad responderá: “la arepa”, “las empanadas” o incluso “la hallaca”. Y sí, todas estas comidas típicas son una delicia y de verdad me encantan, pero en particular hay un platillo que se lleva el primer lugar en mi corazón y a continuación les contaré cuál es.

Before I begin, I must say that the gastronomy of my country is greatly characterized by being very colorful and attractive to the eye and it is considered one of the most varied in the world, a product of the great miscegenation that occurred in the colonial era. At that time, the indigenous gastronomy that populated the current Venezuelan territory began to fuse with European and African gastronomic traditions and it is then, from here, that Venezuelan cuisine evolved and developed a wide range of aromas, flavors and colors since with the arrival of new races and traditions also came new foods and "culinary techniques" that with the passing of time became characteristic and traditional in our territory.

On the other hand, it is very normal that every time we talk about a particular dish in our country, we associate it to a specific region of the country or to a festive time of the year and I dare say that is why many of us find it difficult to choose a single dish as our favorite among so many excellent dishes we have. Probably if you were to ask a Venezuelan abroad, what is the food he or she misses the most from Venezuela? With complete and absolute certainty he/she would answer: "la arepa", "las empanadas" or even "la hallaca". And yes, all these typical foods are a delight and I really love them, but in particular there is one dish that takes the first place in my heart and I will tell you what it is.

Imagina una especie de Pancake de mayor tamaño que los tradicionales y elaborado a base de maíz muy, muy tierno y molido, ¿ya lo imaginaste? Bien, pues básicamente eso es una CACHAPA. Pero, ¡hey!, ¡espera un momento! La cachapa no viene sola pues solemos untarla con un poco de mantequilla y la rellenemos con algún tipo de queso blanco fresco originario de nuestro país como el Queso Guayanés o el Queso de Mano, porque sí, aquí en mi país amamos los quesos y tenemos de diferentes tipos con texturas y sabores muy distintos entre sí. Las cachapas también suelen rellenarse con cerdo frito o cualquier otro tipo de carne, pero yo sin duda alguna prefiero las tradicionales que están rellenas sólo con queso.

Imagine a sort of Pancake bigger than the traditional ones and made with very, very, very tender and ground corn, have you imagined it yet? Well, basically that is a CACHAPA. But hey, wait a minute! The cachapa doesn't come alone because we usually spread it with a little butter and fill it with some kind of fresh white cheese from our country like Queso Guayanés or Queso de Mano, because yes, here in my country we love cheeses and we have different kinds with very different textures and flavors. Cachapas are also usually filled with fried pork or any other type of meat, but I definitely prefer the traditional ones that are filled only with cheese.

Razones por la cual amo las Cachapas tengo de sobra y una de ellas es que esa combinación del sabor dulce con el sabor salado es algo que simplemente es la gloria para mí. Además de que esa combinación de sabores y texturas no tiene comparación, el sabor del maíz junto con la cremosidad y suavidad del queso simplemente deja la boca diluida en toda esa explosión de sabores. Para mí es un completo delirio el simple hecho de percibir el olor del maíz al momento en que las cachapas se cocinan, luego saborear esa suave consistencia y deleitarse con ese color doradito de la masa cocinada es lo que yo considero uno de los mayores placeres de la existencia humana.

Las cachapas originales sólo contienen granos de maíz, y azúcar pero hay algunas personas que las han adaptado y le añaden a la mezcla huevos e incluso un poco de harina para hacerla un poco más"manejable". Si les soy sincera, yo sólo las he preparado cuando mucho dos veces en toda mi vida, este sería la tercera vez. Debo admitir que aún no he logrado que me resulten igual de deliciosas como las que venden en los locales de comida, pero de verdad que vale mucho la pena preparlas en casa.

Reasons why I love Cachapas I have plenty of them and one of them is that the combination of the sweet flavor with the salty flavor is something that simply is the glory for me. Besides the fact that this combination of flavors and textures is unparalleled, the flavor of the corn together with the creaminess and softness of the cheese simply leaves your mouth diluted in all this explosion of flavors. For me it is a complete delirium the simple fact of perceiving the smell of corn when the cachapas are cooked, then savoring that soft consistency and delighting with that golden color of the cooked dough is what I consider one of the greatest pleasures of human existence.

The original cachapas only contain corn kernels and sugar but there are some people who have adapted them and add eggs and even a little flour to the mixture to make it a little more "manageable". To be honest, I have only made them twice in my life, this would be the third time. I must admit that I still haven't managed to make them as delicious as the ones sold in the local food stores, but it is really worth it to prepare them at home.

INGREDIENTES | INGREDIENTS

✔ 7 a 8 mazorcas, esto aproximadamente equivale a 4 tazas de granos de maíz.

✔ 1 taza de agua o leche (recomiendo que se emplee leche porque le da un mejor sabor a la preparación)

✔ Endulzante al gusto (yo de por sí no empleo azúcar, así que utilicé 3 cucharadas extracto de estevia)

✔ 1 pizca de sal

✔ 4 cucharadas de harina de maíz precocida (en el caso de que la mezcla resulte muy líquida)

✔ 250 gramos de Queso Guayanés para rellenar

✔ 7 to 8 cobs, this approximately equals 4 cups of corn kernels.

✔ 1 cup of water or milk (I recommend using milk because it gives a better flavor to the preparation).

✔ Sweetener to taste (I myself do not use sugar, so I used 3 tablespoons stevia extract).

✔ 1 pinch of salt

✔ 4 tablespoons of precooked corn flour (in case the mixture turns out very liquid).

✔ 250 grams of Guayanés cheese for stuffing

El primer paso y realmente el más fastidioso es desgranar toda la mazorca. Aquí hay que tener especial cuidado en no rebanar nuestros dedos con el cuchillo. Hay personas que emplean maíz enlatado para ahorrarse este trabajo de desgranar, pero yo prefiero usar el maíz natural.

The first and really the most fastidious step is to husk the whole cob. Here we must be especially careful not to slice our fingers with the knife. Some people use canned corn to save themselves the work of shelling, but I prefer to use natural corn.

Luego, colocaremos el maíz en la licuadora junto con la leche y comenzaremos a triturar. Luego, podemos añadir el endulzante y la pizca de sal. En caso de que la mezcla resulte demasiado líquida se puede añadir un poco de harina para espesarla. La consistencia de est mezcla debe ser espesa y grumosa (yo la llamo consistencia de pegote).

Then, we will place the corn in the blender together with the milk and start grinding. Then, we can add the sweetener and the pinch of salt. If the mixture is too liquid, a little flour can be added to thicken it. The consistency of this mixture should be thick and lumpy.

Y ya luego lo que resta es la parte más fácil. Para cocinar la mezcla, la sartén o budare que vayamos a emplear debe de estar bien caliente y es necesario untarla con un poco de aceite para evitar que la mezcla se pegue y luego todo se convierta en un verdadero desastre. Con ayuda de un cucharón tomaremos una buena porción de la mezcla y la esparciremos lo más que podamos, la idea es que la cachapa no resulte tan gruesa, debe de tener 1 cm de grosor cuando mucho.

And then what remains is the easiest part. To cook the mixture, the frying pan or budare that we are going to use must be very hot and it is necessary to grease it with a little oil to prevent the mixture from sticking and then everything becomes a real mess. With the help of a ladle we will take a good portion of the mixture and we will spread it as much as we can, the idea is that the cachapa is not so thick, it should be 1 cm thick at the most.

Dejaremos cocinar durante unos minutos y taparemos la sarten para que se cocine más rápido la cachapa, cuando la mezcla comience a secarse en su superficie es hora de dar la vuelta para que se cocine por el otro lado. Aquí la verdadera prueba de fuego es tratar de darle la vuelta a la cachapa y que no se desarme en el intento. Siempre digo que la primera es la de prueba y ya luego le iremos agarrando el truco al momento de voltearla.

Let it cook for a few minutes and cover the pan to cook the cachapa faster, when the mixture begins to dry on the surface it is time to turn it over to cook on the other side. Here the real litmus test is to try to turn the cachapa over and not let it fall apart in the attempt. I always say that the first one is the test and then we will get the hang of flipping it.

Ahora, sólo debemos untar un poco de mantequilla a nuestra cachapa y rellenarla con un buen trozo de queso fresco. Y lo único que restará será disfrutar de esta delicia gastronómica.

Now, all we have to do is spread a little butter on our cachapa and fill it with a good piece of fresh cheese. And the only thing left to do is to enjoy this gastronomic delight.


RESULTADOS | RESULTS

Y este fue mi dorado y delicioso resultado final. Ustedes de verdad no tienen idea el aroma tan delicioso que se desprende mientras las cachapas se cocinan. Ese aroma, junto con la superficie dorada y la mezcla dulce-salada son como una especie de regalo de los ángeles.

And this was my golden and delicious end result. You really have no idea how delicious the aroma is while the cachapas are cooking. That aroma, along with the golden surface and the sweet-salty mixture are like a kind of gift from the angels.

Con las cantidades de ingredientes que menciono en esta publicación, la mezcla rinde perfectamente para preparar unas 8 a 9 cachapas, ideal para unas cuatro personas.

Esto sonará un poco cliché, pero debo agradecer a #OCD por esta iniciativa. Es lindo dar a conocer un poco de las tradiciones de mi país, porque como buena Venezolana que soy me encanta darle a conocer al mundo las cosas tan geniales que tiene mi país. También me parece sumamente increíble poder conocer sobre tradiciones y culturas de otros países.

This may sound a bit cliché, but I have to thank #OCD for this initiative. It's nice to show a little bit of the traditions of my country, because as a good Venezuelan I love to let the world know the great things that my country has. I also find it amazing to learn about the traditions and cultures of other countries.
