Guilt Free Banana & Blueberry Muffins

It’s the End of the Easter holidays for us and my wife assisted me make these muffins before my gaming session.

These are the ingredients we used: 60ml of melted coconut oil
60ml soy milk (or milk of choice)
125g flour
1 tsp baking powder
3 ripe bananas
1/2 a cup of Blueberries

Steps.
1.Preheated the oven to 180C and grease the muffin tray with coconut oil.

2.Peel and mash the banana’s in a bowl.

3.Add the coconut oil and soy milk and mixed until combined.

  1. Add baking powder and slowly incorporate the flour making sure to stir out all lumps.

5.Fold in blueberries.

  1. Fill each muffin hole and place in the oven and bake for 20 minutes.

If you have been good all week and want a bit of extra flavour you can add a sprinkling of cinnamon sugar on top.

Each mini muffin contains roughly the following.
57 Calories, 7g carbs, 1g protein, 3g fat, 2g saturated fat.
If you don’t eat them all, you can store them in an air tight container for about 5 days or in the freezer.
Perfect warmed up with a cup of tea.
