Hi there Foodies & Vegans! Time For Pasta!😋 🍝
Today: Vegan Linguine with Fresh Spinach & Beluga Lentils and Seeeeeeeeds (yes, a lot of vegans throw pumpkin or sunflower seeds on nearly anything 😅)
So first you cook your pasta "al dente", pour the water out & keep the pasta, here Linguine, in the big pot. Then you add the ready cooked Beluga Lentils and mix them with the pasta. In the other pan you prepare your fresh spinach by cooking it up together with some olive oil, garlic, onions, salt & pepper and some Italian herbs (ready made mix or basil,oregano,rosemary..)
Prepare a nice plate: You can serve the pasta, lentils and spinach all separately(one after another) or you do " the marriage" of all ingredients in a big pot, that's the way i like it. To each his own. Once all ingredients are together you can serve them nice on a plate like this:
Add the Pumpkin and/or Sunflower Seeds & fresh ground Pepper (all non vegans can also add some Parmesan cheese here😉 )...
Some Cherry Tomatoes always look great and i nearly got all the Italian colors together 😀 🇮🇹
Some more Olive Oil on top & Buon Appetito, Enjoy Your Food!
