El gusto forma parte de los cinco sentidos que tenemos los seres humanos y desde el punto de vista científico hay una explicación profunda en la que no pretendo adentrar porque al punto que quiero llegar no es ese; sin embargo los sentidos generan estímulos o reacciones que envían información al cerebro y este la procesa transformándola en una respuesta.

El sentido del gusto nos permite a través del órgano que es la lengua saborear e identificar alimentos como por ejemplo cuando son salados o dulces, si están calientes o fríos y la textura que poseen logrando diferenciarlos unos de otros. El olor que es el olfato también juega un papel importante en este sentido porque atrae el aroma que luego al saborearla se concluye con una explosión en la boca que se puede sentir, disfrutar e incluso llevarte de viaje a un recuerdo especifico que es mi tema de hoy “la memoria gustativa”.

Hay una película a la cual voy a hacer referencia porque aparte de que me gusta mucho tienen relación con el tema y es "Ratatouille" de 2007 creada por el director Brad Bird, es una comedia animada y de fantasía sobre una rata Remy que quería ser chef inspirada en el libro de Gusteau, "Cualquiera puede cocinar", para mi muy emotiva también.

There is a movie to which I am going to refer because apart from the fact that I really like they are related to the subject and it is "Ratatouille" from 2007 created by the director Brad Bird, it is an animated and fantasy comedy about a rat Remy who wanted to be a chef-inspired by Gusteau book, "Anyone can cook", for me very emotional too.


La rata cae por accidente sobre el techo de un restaurante donde trabaja Alfredo Lingüini y descubre que jalando del cabello del joven escondido dentro del gorro, es decir, como una marioneta podía controlar sus movimientos siendo un gran éxito sus comidas. Aparece Anton Ego un crítico de la comida o artes culinarias como se dice formalmente, va al restaurante y le preparan el famoso plato "ratatouille" aunque tenían dudas de prepararlo por ser un plato algo sencillo de campo para una persona tan importante lo hicieron.

Cuando Anton Ego prueba el primer bocado inmediatamente viaja al pasado y va directo a cuando era niño y su mamá le cocinaba ese plato, describen el mismo como algo nada ostentoso ni gourmet por el contrario muy sencillo, lo que demuestra que en la sencillez de las cosas hay grandes momentos e inolvidables recuerdos.

Creo que hay personas que quizás no desarrollan tanto este sentido del gusto y por lo tanto le restan importancia a la memoria gustativa. En mi caso sí y por eso antes de escribir este post no dude en poner como ejemplo esta película que tiene muchas escenas y yo aquí no las explico porque quería llegar a este punto en particular, Yo tengo mis propios recuerdos de mi niñez por ejemplo: hasta el día de hoy la arepa asada esa que hacemos en un budare, creo que por lo menos los venezolanos saben de que hablo; cada vez que la hago viajo a mi infancia de 6, 7 y 8 años aproximadamente ese sabor a mantequilla derretida en la arepa caliente y luego el queso blanco rayado es un sabor que no olvido, así como también algo que hacia mi mamá era picar el tomate en rodajas y le ponía sal y mayonesa inolvidable para mi, incluso rellenaba en algunas ocasiones mi arepa con eso, seguramente esto les parece sencillo y es así, esto tan simple para mi es invaluable, el café negro, caliente y dulce es otro recuerdo y seguramente por eso me encanta tanto, el sabor a cilantro en las sopas de mi mamá cuando yo las hago viajo siempre al pasado.

Tengo memoria gustativa, algo que hago cuando cocino las comidas preferidas de mis hijas que es siempre tengo todos estos recuerdos de mi infancia e intento que ellas también tengas o logren tener sus propias memorias gustativas.
