Quiero compartirles una receta económica y fácil, hecha con verduras, que es ideal para acompañar una comida, o también es una opción para un plato principal ligero, “rollo de papas y vegetales"

To make this recipe you will need:

Para hacer esta receta necesitarás:

• 1 kilo of potatoes.
• Vegetables for the filling (zucchini and corn).
• Finely chopped coriander.
• Butter.
• Salt and pepper.

• Cilantro finamente picado.
• Mantequilla.

First you must boil the potatoes and once they are ready, prepare a puree and add the chopped cilantro and mix well.

Primero debes hervir las papas y una vez que estén listas, prepara un puré y agrega el cilantro picado y mezcla bien.

Next, shell the corn on the cob and chop the zucchini into small cubes.

A continuación, pelar la mazorca de maíz y picar el calabacín en cubos pequeños.

Then add a few tablespoons of butter in a hot pan, proceed to fry the corn and zucchini, adjust the salt and pepper.
