How to cook Quang noodles? The Traditional Vietnamese Local Dish

Do you know? In Vietnam, this month is the 7th month in the lunar calendar. And according to Vietnamese Buddhist tradition, the 15th of the 7th month is one of the most important and meaningful holidays of the Buddha, which is the day of filial piety to parents. This holiday shows the filial piety culture of Buddhism, one of the "Four great graces" that every child must not forget. I’m lucky to have both my father and mother, who gave birth to me and raised me. For me not only today, but it’s also every day I’m always grateful for that.

In this month, many people eat vegetarian for the whole month, but I just fast twice. I also often fast twice a month, on the 1st and 15th of every lunar month. I fast to pray for my parent’s good health and the family's peace. For me, fasting is not only spiritually meaningful but also has great physical value. Many people think that a vegetarian diet is both monotonous and easy to cause a lack of nutrients, but being a vegetarian is not only good for health but also protects beauty.

Today, I will introduce to you how to cook Vegetarian Quang Noodles. This is one of my favorite food. Quang noodles are a specialty of Quang Nam province. There are many varieties of Quang noodles: chicken noodles, snakehead fish noodles, meat, and shrimp noodles, …but today I want to show you how to cook Vegetarian Quang Noodles.

Making this food is quite simple, all you need are Quang noodles, tomatoes, carrots, scallions, dry vegetarian food, tofu, oyster mushroom, vegetables, chili, and some condiments: sugar, salt, black pepper, monosodium glutamate, seasoning, oil, soy sauce …

Firstly, you must soak the dry vegetarian food until they are soft, then squeeze them until they are dry. Next, season with some sugar, salt, black pepper, monosodium glutamate, seasoning, oil and mix them up.

Add the tofu to a hot oil pan, fry until golden brown on both sides. Then, you can cut it into bite-sized pieces. Follow the picture below.

In the same pan, heat vegetable oil and add fried tofu and dry vegetarian food, stir them. Then, turn the heat down to medium, Toss in the mushroom, some monosodium glutamate and fry it up, let this cook, about one more minute.

Chop the tomatoes, heat a little more vegetable oil in another pan, and add the chopped tomatoes, chopped scallions, stir them up for 2 minutes.

At the same time, put a pot of water on the stove and heat it, add those carrots to the pot and cook until boiling. You can put in it some straw mushrooms to make the water sweeter. You can cut the carrots into small flowers like the pic below.

When the pot of water is is boiling, add sautéed dry vegetarian food to the pot and cook until boiling again. Then, add whole sautéed tomatoes to the pot to make the color of the pot of water look more attractive.

So, I’ve finished cooking Vegetarian Quang noodles. You can eat noodles with some raw vegetables and a cup of soy sauce.
