Alu Dam

Today, I have brought a flavorful and spicy dish named "Aalu Dam" for you and your family, which we all love very much. Let's see what ingredients we will need to prepare this dish.

For this, we will need the following ingredients:

Potatoes (aalu)

Two onions (do payaj)

Some cloves of garlic (kuch kali lahsun)

Four green chilies (mirchi char)

A small piece of ginger (adarka chhoti)

Two tablespoons of yogurt (dahi)

Spices: One tablespoon of coriander powder (dhaniya), half tablespoon of red chili powder (lal mirch), half tablespoon of turmeric powder (haldi), and one tablespoon of garam masala.

Now, let's proceed with the cooking process:

First, peel the potatoes and fry them in oil until they are cooked.

Crush the garlic, onions, green chilies, and ginger together to make a paste.

In a separate bowl, whisk the yogurt until smooth.

Take a kadai (wok) and add some oil. Once hot, add cumin seeds (jira) to it.

After the cumin seeds crackle, add the paste of garlic, onions, chilies, and ginger. Saute it for a while.

Now, add the spice mix: coriander powder, red chili powder, turmeric powder, and garam masala. Cook the spices for a couple of minutes.

Next, add the whisked yogurt to the kadai and cook for another two minutes.

Add the fried potatoes to the kadai and cook for an additional two minutes, stirring well.

Finally, garnish with some chopped coriander (dhaniya), and your delicious Aalu Dam is ready to be served!
