Mix vegetables with coconut milk

Vegetable is one of the original and natural diet. The more colorful the food in your plate, the better.

Every Saturday, we are having a potluck for lunch. Every family will bring food to be shared to everyone. There is no special occasion, a usual day, a usual lunch. Every family will usually bring one or two kinds of food and everyone will end up to have many foods. If you're three in the family, you will bring food for five to six person. In this way, we can share some food to the visitors who don't have food.

Potluck is also our way of bonding. A time to eat together with the family and members of the church. It is also a time to share some experiences and talk about life while eating and it makes the meal more enjoyable.

Last Saturday, I and my husband just prepared a simple mix vegetables with coconut milk.

The original plan is to cook Pinakbet but when I saw one coconut, I suggest to cook it with coconut milk.

Without further ado, let's prepare the ingredients.

Ingredients:

3 small slices of fried dried fish
1 piece medium size taro
1 slice Squash
1 bundle string beans
10 pieces ladies finger (okra)
2 small size onions
Moringa leaves
1 ginger
6 cups of Water
Salt

Procedure:

Step 1. Prepare the ingredients.

Get the three slices of fried dried fish and cut them into small pieces.

Peel, wash and then slice the taro into small pieces or according to your desired sizes.

Wash, peel and slice the squash accordingly.

Cut the string beans into desired length.

Wash and then cut the okra or ladies finger according to your desired size and shape.

Slice the onions and press the ginger (not in the picture because I forgot it lol.)

Grate the coconut and press them together to get it's milk. Don't put water in it, just pure coconut milk and then strain to remove the excess pulp. Set aside the pure coconut milk.

Put 6 cups of water in the coconut pulp to get the remaining coconut milk.

Step 2. Get that 6 cups of water with second coconut milk and put it in the pot together with the fried dried fish. Put salt according to your desired taste. Let it boil.

Step 3. Add the onions, garlic and taro. Let it boil.

Step 4. Add the squash and string beans. Let it boil.

Step 5. When the vegetables are tender, add the moringa leaves followed by the fresh pure coconut milk. Let it boil a little while and turn off the heat.

Step 6. Ready to be served.
