Today I present to you the recipe for "Catalinas Venezolanas", a traditional sweet from my beloved country, whose tradition has been maintained over many years. This time I will show you the recipe from "El Rincón de Tata".
Catalinas appear as a modification of soft biscuits, whose origins are from Spain. According to the stories of our grandparents, the Catalinas originated when honey was replaced by molasses of paprika, giving them that particular dark and sweet colour, typical of our country.
Procedimiento / Process
Luego que se disuelva se tapa y se deja hervir, siempre revolviendolo.
Step 1: Place one cup of water over a low heat, stirring constantly.After it dissolves, cover and let it boil, stirring constantly.
Step 2: Mix all the solid ingredients and then the liquid ingredients separately.
Una vez bien mezclados, se añade el liquido a los secos y se unen en una sola.
Luego se sigue revolviendo constantemente por unos 5 minutos en forma envolvente.
Step 3: Once well mixed, add the liquid to the dry ingredients and combine them into one. Then continue stirring constantly for about 5 minutes in an enveloping manner.
Se continúa amasando con las manos, hasta lograr una masa lisa y suave.
No agregen mas harina a la mezcla, de ser necesario solo espolvorear en el meson para facilitar el amasado.
Step 4:Continue kneading with your hands, until you have a smooth and soft dough.
Do not add more flour to the mixture, if necessary just sprinkle it on the counter to make kneading easier.
De inmediato se procede a extender la masa con un rodillo que quede con medio centimetro de grosor.
Puede hacerse los circulos con un vaso o molde de su preferencia.
Luego se colocan en una bandeja con mantequillada y harina, dejando siempre un espacio entre cada unidad.
Step 5:Immediately proceed to roll out the dough with a rolling pin so that it is half a centimetre thick.
You can make the circles with a glass or mould of your choice.
Then place them on a buttered and floured tray, always leaving a space between each unit.
Para finalizar se meten en el horno previamente calentado a 180°c por unos 20-25 minutos.
Step 6:To finish, put them in the oven previously heated to 180°c for about 20-25 minutes.
