Delectable Mini Cheese Rolls

What is it about bread? Bread is totally wonderful, cheese is delicious and the combination is sublime. Making your own bread is an act of love; there’s nothing quite like the fragrance of bread baking in the oven, now is there? Oh, and that tempting wait while it rises and does its thing; the anticipation is delightful.

I adore baking bread (haha, by now that’s quite obvious 🤗🙂), but I love cheese rolls the MOST, especially served with real butter and cream cheese (lord, I know, more cheese; wicked…haha!)

Ingredients

_3 ½ cups of bread flour or all purpose flour
_3 tablespoons of brown sugar
_2 tablespoons of vegetable oil
_packet of instant yeast
_3/4 teaspoon salt
_1 teaspoon garlic powder
_1 ½ cups of warm water
_1 ½ cups of sharp cheese (such as cheddar), grated

Method

_Dissolve the sugar in warm water in a large bowl
_When the water is blood temperature, add the yeast and oil
_Allow yeast to activate (foam. Takes about 5 minutes)
_Add the flour. Add salt and garlic powder on top, mix into flour before combining with the water and yeast. Add half the cheese and mix using a wooden spoon or spatula.
_knead the dough in the bowl until the sides of the bowl are clean and the dough elastic (5 - 7 minutes)
_Cover bowl with a clean tea towel and put into a warm place for 30 minutes for the dough to rise
_Grease a baking sheet. Form mini rolls and place on a baking sheet with enough space between to allow for expansion. Freeze any excess dough at this point for up to three months
_Add excess cheese on top. Cover with tea towel and allow to rise until doubled in size (30 minutes)
_Bake at 180 degrees Celsius for 12-15 minutes until golden brown (until a toothpick comes out clean)
