Comfort in a Bowl. Bright, Tasty, Vegetable Soup
This bright, tasty vegetable soup takes minimal effort, and comes together in about 30 minutes, so there’s no excuse, in my book anyway, to be lazy and open a can - when you make your own food at least you know what’s in it, haha, obviously, that’s a win!
On the nutritional front this bowl of goodness will provide more than 60% of your daily vitamin and mineral needs, so it’s super healthy as well as delicious.
Ingredients
2 stalks of celery, ribbed
3 carrots, peeled
1 red onion
2 leeks
1 cup of split peas
2 Tablespoons of tomato paste
Handful of baby tomatoes
Handful of Italian parsley
1 stock cube (vegetable or chicken)
2.5 L water
Oil for frying (1-2 tablespoons vegetable oil of choice)
Method
Dice the celery, onion and leek and sweat them over low heat in a little vegetable oil (use a heavy bottomed saucepan/pot)
Dice the carrot into bite sized pieces, halve the tomatoes. Chop the parsley.
Add the carrots, tomatoes, half the parsley, the water, stock cube and half the split peas to the pot. Cook for 15-20 minutes until the peas are tender.
Blend half the ingredients from the pot in a blender. (Ensure that to add all the tomatoes to the blend)
Return to the pot, top up with water if necessary then add the balance of the split peas. Cook until peas are tender. Add salt and pepper to taste. Add the balance of the parsley 5 minutes before serving.
Serve in deep soup bowls or cups with cheese straws or melba toast. Enjoy!
