Seafood Penne with Anchovies and Crayfish

Seafood Penne with anchovies and crayfish marinated with parsley and lemon, string beans and arrabbiata pesto

Ingredients:
300 gram penne
150 gram crayfish
250 gram String Beans (or other green beans)
50 gram anchovies (with the oil)
1 lemon
30 grams of parsley
Tablespoon of (spicy) arrabbiata pesto.

2 (full) plates, or 3 starter plates.

This is one of my favorite seafood pasta! It’s very quick to make and also very healthy 😊
The anchovies combined with the spicy arrabbiata pesto give a distinct taste, while the crayfish make sure to give enough proteins.

Start with mixing the Lemon skin, the parsley, the juice of half a lemon, and a pinch of pepper and salt in a bowl. Let this marinade for 10 to 15 minutes. We’ll use this to finish up our dish.

Boil enough water to cook your pasta. After 5 minutes add the String Beans. 5 minutes later both should be ready.

After adding the String Beans with the pasta start with glazing the anchovies (if you bought the anchovies with some oil add it for extra flavor!). Add the onion and heat until it has become golden-brown, then add the tablespoon of pesto. Heat without burning the pesto, so keep shuffling all of it.

When the pasta and String Beans are done (after 10 minutes) add both and the crayfish in the pan with the anchovies. Heat for another 2 to 3 minutes until everything is ready to go.

Add the marinade and season your seafood the pasta and enjoy your meal 😊

Add some lemon juice, and if you need it some parmesan, to your own taste.

Lovely 20 min delicious and nutritious dish.
