Hace unos días estuvo de cumpleaños una de mis sobrinas, y es amante del chocolate , así que estuve buscando una receta torta de chocolate que adecuará a lo que yo quería hacer, ósea humedad y con mucho sabor a chocolate, además de que me encanta que la torta tipo panqué cuando es de chocolate se vea bastante oscura, es por eso que me decido por la receta que les presento le realice unas pequeñas modificaciones basada en otras que realice con anterioridad y realmente el resultado fue espectacular, una torta humedad súper deliciosa, esponjosa con un aroma y sabor a chocolate increíble, y como si fuera poco la rellene y decore con chantilly de chocolate, ganache y galletas, la verdad una combinación explosiva.
Todos los años trato de sorprender a mi sobrina y complacerla con lo que más le gusta, este era su cumpleaños número 18 y tenía que ser especial, una decoración sencilla algunos pasapalos y dulces formaron parte de su festejo que fue la parte que me tocó a mí, además de la decoración que la verdad no es mi fuerte, pero siempre trato de dar lo mejor de mí en estos casos, así que reunidos con los familiares y amigos más cercanos, celebramos de manera amena como cada año y degustando de la deliciosa comida, realmente fue muy ameno y la torta fue una fascinación para todos, y los más importante a ella le encantó.
Está demás decir que el chantilly es excelente para la decoración de tortas, muy fácil de preparar, usar y se mantiene por horas fuera de la nevera, además de su sabor inigualable, para los que no están muy expertos con el merengue les aseguro que está crema se convertirá en una de sus favoritas, sea de vainilla, chocolate o hasta de dulce de leche, lo único que hay que tener en cuenta al momento de su preparación es que la crema, así como los utensilios a utilizar deben estar fríos, y evitar sobre batir la crema y listo, así que vamos con esta maravillosa receta de hoy.
Previamente precalentamos nuestro horno a 180ºC, y tendremos un molde de 18cm por 6cm, previamente engrasado y enharinado.
Cernimos los ingredientes secos y reservamos (harina y cacao). Batimos la margarina con el azúcar e incorporamos la vainilla, procedemos a batir hasta que la tome un color blanquecino.
A continuación, agregaremos los huevos, y batimos hasta que esté bien incorporado, seguidamente incorporaremos la leche y la harina de trigo de forma intercalada, batir lo menos posible, integramos con una miserable o paleta, y luego si queremos 1 minuto con la batidora para eliminar algún grumo.
Mezclaremos el café caliente con nuestro cacao en polvo de manera que se nos haga una especie de crema o ganache de chocolate, mezclamos bien para que no quede ningún grumo, si lo realizamos de esta forma evitamos que se nos reseque la mezcla de la torta.
Ahora incorporamos la crema del cacao y el café a nuestra mezcla, con una paleta en forma envolvente.
Hornear aproximadamente por 30 minutos y no abrir el horno durante la cocción. Verificamos que esta lista, introduciendo un palito de altura y que este salga limpio. Al retirar del horno dejamos que se enfrié y desmoldamos preferiblemente en una rejilla, normalmente lo dejo reposar de un día para otro.
Primero que nada, por lo menos 1 hora antes colocaremos todos los utensilios en el congelador, así como la crema todo debe estar bien frio. Ya teniendo todo frio, procedemos a colocar en nuestro bol, la crema y comenzamos a batir hasta que empiece a montar el tiempo varia según la batidora, en ese momento colocaremos el cacao y el azúcar impalpable con un ayuda de un colador y batimos hasta que esté todo bien integrado, evitemos de no sobre batir el chantilly. Pasamos a una manga y decoramos la torta a nuestro gusto, yo dividí en tres capas y rellene también con la crema, para la parte de arriba utilice galletas de chocolate, ganache y migas de la torta.
