Hive Top Chef! | Weekly Cooking Competition | Spicy Clam Soup with Lemongrass, Vietnamese Style

This week's Hive Top Chef Theme is SPICY.
And I have the perfect dish for it!

Since being in Vietnam, I've had seafood in numerous occasions; be it for entertainment, casual dinner or celebrations. Seafood is always a must especially in Saigon; as they say seafood is most fresh here and truly affordable. I have to agree with them because no matter where I go and order seafood, it's always fresh.

Which is why I decided one day to prepare one of the most simplest seafood dish in Vietnam. This dish is so common that on every dinning table be it at home or in a restaurant, one is bound to find it served. It's so easy to prepare and absolutely delicious to eat.

Ingredients
1-2 kg of fresh clams
Chilies ( cut small )
Few stalks of lemon grass
2 litres of Water
A few stalks of fresh basil
Salt for seasoning

Cut the lemongrass thinly and if possible, smash it so that the fragrance from the lemongrass comes out. As for the chilies, diced it up. This is to be used for the soup.

For the clams, soak it in cool water with salt and a few pieces of whole red chilies for 4 hours at the least. The chillies actually help to remove the sediments such as sand from the insides of the clams. Note to remember is that if the clams are already opened before soaking it into the cool water that means it's not fresh and best to remove it immediately.

Heat up the frying pan and put in the lemongrass and cut chilies. Add in the clams and water. Allow to boil and reduce the fire to simmer for 3 mins. You can add in fresh basil and a bit of salt for taste. Serve it while it's hot to fully enjoy the freshness of the clams. The soup is delicious to enjoy due to the taste from the lemongrass and spiciness from the chilies. If you like your soup really spicy, throw in more red chillies 😆

Isn't this a simple yet delicious dish to enjoy - especially on a cold, rainy day. Like I said, the difficult part is the waiting time for the soaking of the clams. If not, the rest of the steps are just easy peasy.
