Several hours before cooking the pig we prepare a marinade by chopping all the ingredients and joining them together very well and then rubbing and placing them on the piece, before placing the marinade on the pig I make a few openings with a knife to the piece of pig that we are going to bake, so that it has that delicious flavor all over, once our piece is prepared we cover it with aluminum foil for a good while before roasting it so that it gets more flavor, After at least three hours we can bake our pig on high heat, first we leave the aluminum foil for about three hours until the meat begins to detach from the bone also this is depending on how big the piece is, then we remove the aluminum foil to brown all over, we must bathe our pig with the sauce each time we turn it to brown,
The quality in the flavor is impressive, I usually add olives and capers in its preparation but you can use thyme, rosemary and English sauce, I also remind you that its cooking time depends on its weight that would be approximately one hour of cooking for each kilo of pig, I hope you enjoyed this delicious recipe and we can continue to share this interesting space in my kitchen!
