Qurator's: Hive Top Chef! | Spinach

Hello, and greetings @qurator. here is my entry for Qurator's hive Top-Chef with the theme spinach.


The spinach pie is made in 2 steps

first making the crust
then the filling

making the crust

Ingredients:
1.5 cups whole wheat flour
40 grams butter
30 grams of frozen butter
2 tbsp oil
1/4 cup or less of cold buttermilk
1/2 tsp salt


Grate the frozen butter and keep ready.


put the flour, normal butter salt, and oil in a bowl and mix well. in the end, add the frozen grated butter and mix it. gradually mix in just enough buttermilk to make it stick together.


Combining the wet flour, make a suitable round shape for the pie and fix it in the pie pan. roll out a pie crust and set it in a pie pan. I fold it in half. lift and slide it over the edge of the pan and then unfold it to fill the pan. then trim the edges.

preheat the oven to around 220c.


bake the pie crust for around 12 to 15 minutes.

meanwhile, make the filling.

200-gram fresh spinach
2 onions for ex 1 red and 1 white.
1 chinese garlic
30 grams fresh rocket from the garden
1 tbsp butter
1/2 tsp salt
1/2 tsp black pepper
1 tsp thyme
1 tsp basil
1 tbsp oil
300 grams cottage cheese
30 grams of kale from the garden
I was going to use mushrooms but at the last moment, I canceled them but next time I will include them.


In an iron pan melt the butter with the oil. when it is hot add the thyme.


then the chopped garlic and sliced onion, and stir.


When the onion turns golden and starts aromatic add chopped kale and rocket and stir until turns soft.


Now is the time for spinach. Add the spinach to the pan. It was baby spinach so no need to chop it.


Mix the spinach with onion and kale, and rocket.


Add salt and pepper (freshly crushed)


Then stir in the dry basil.


Cooking for 3-4 minutes should be enough. Let it cool down.


Add 1 cup cottage cheese to the spinach mixture.


Here is assembling spinach pie. filling with spinach mixture.


top with some uncooked baby spinach


then spread 2 tbsp cottage cheese on top of fresh spinach leaves.


along with a few leftover crust crumbs from the trimming


Here is the finished spinach pie. I made a sauce from the leftover liquid of the cooked spinach along with a little cream, butter, and corn starch.
