Have a bite with Fëanor - Issue #2

Today i made a very refreshing meal, with some ceviche, rice with fish, and a nice tomato salad to go with it. All properly washed down with some Portuguese Verde.

Horse mackerel ceviche

I started by going to the market and get this guys here, they are not at all my personal favourite, still, good for ceviche, and a tasty one despite my personal preference, it was also the one that arrived today, having a friend to sell you fresh produce can go a long way...

First you need to debone the fish, there are many recipes on HIVE, i use lime, lemon, bell peppers, onions salt and vinegar. After you have it deboned the great part of it is done. I just squeezed the limes and lemons, some vinegar and salt and i put it aside for now.

I use the fish bones to make some broth i then use for the rice, it will make it tastier.

In the mean while i started with my onions and tomatoes for the rice so it would be ready in time to put the broth in.

Broth is good

Broth of anything you might anyhow dispose off, usually makes for great tasty dishes, i sometimes get asked about it and why bother making some broth that can really delay the whole thing, but in the end, what would you do on those 40 minutes or hour extra? Most times is all about planning it ahead.

After cooking the rice and using that broth and some parsley this is what it looked like.

Salads always

I have this never ending string of tomatoes coming my way this time of the year and i love them people who gift them to me, this are real ones not those from the store, i have 2 salads with them everyday no chance, truly marvelous this ones :D

In this meantime some hour or more passed and the ceviche looked pretty much done. I later put a bit of peppers on it and some hot and spicy olive oil i use with infused with some hot peppers inside :D That and the parsley make it really fresh.

Wine

We had this great wine from Ponte Da Barca, a small village in the north, this is also not my favourite wine, but i give it to them, it is for the purpose of eating fish and in hot days, a great surprise, very mellow endings but fruity and fresh all the way down, better have this one really cold.

All things considered ended up being a bit much, i really try to make it a spot on dose but i always make extra...
