Today I'll be showing you how our traditional soup Ogbono and Ewedu is done here in Nigeria. Ogbono and Ewedu Soup are two different soup from the Southern-Eastern and Western part of Nigeria, but they are a perfect match together, they both share a common property which is that they both have slimy effect. Coupled with the many health benefit associated with the two soups, most of our traditional food are mostly swallow, the slimy effect of this soups make it more easy to drown the semi-soild foods.
This is also my Entry into the OCD community boost contest organized by @ocdb, and this week they are highlighting Foodbeehive community. So we are required to write and show how to prepare our traditional soup.
So without further more talks, let's make Ewedu and Ogbono Soup.
Recipe Needed
Ogbono (irvingia), Ewedu (Jute mallow), Eja (Fish), Maggi (Seasoning), Salt, Pomo (Cow Skin), and Iru (Locust Beans), Ata (Pepper).
Step 1
Preparing the Ewedu(jute mallow) Soup
Smoothly chop the ewedu (jute mallow), this can be done by grating the leaf. Put a little amount of water on fire make sure it not too much if not the ewedu (jute mallow) may lose it slimy effect.
After boiling the water add a little piece of kaun (potash), then add the chopped **ewedu (jute mallow) and add salt, let it boil for a few minute, then put it down.
Do not cover the soup while it still hot, if you do it will lose it slimy effect.
Finished Result
Stage 2
Boil the Fish and Cow Skin
Place your water on fire,
then add your Fish, Pomo, Iru, Salt, Maggi and some grinded pepper(if it hasn't been grinded with the Ogbono).
Then let it all boil together for some minutes.
Result
Stage 3
Pour some red oil on fire wait till it's has heated up then add the ogbono (irvingia) and stir for a little while,
Add the ewedu (jute mallow) soup from Stage 1
And the boiled fish and cow skin from Stage 2,
Then mix it all together. Give it a few minutes to boil.
Remember not to cover the soup while cooking, if not all the slimy effect would be gone.
And here you have your Ewedu and Ogbono Soup.
It can be eaten with Eba, Semo, Fufu or any type of swallow food.
