I am glad to be here to share a recipe with you again. It is a dip, an eggplant paste that can be spread on breads, crackers, or served warm on the plate to accompany rice, legumes or whatever you want.
In my case I prepared it to share with colleagues in a lunch "a la canasta", which means that each attendee brings something to share with others. It seems to me a very enriching way of socializing since it awakens curiosities, compliments and multiple exchanges among those who participate, it has no limit in terms of flavors and textures so it opens the possibility of having new taste experiences.
My recipe started from the idea of preparing a Baba Ganoush, but I was missing a fundamental ingredient that I could not get in time so I prefer to call it "smoked eggplant paste" because it includes and at the same time excludes different nuances of flavor.
It's super easy to make and takes very little time. Don't miss it!!!

Me alegra estar aquí para compartir nuevamente una receta con uds. Se trata de un dip, una pasta de berenjenas que puede untarse en panes, galletas, o servirla tibia en el plato para acompañar un arróz, legumbres o lo que quieras. En mi caso la preparé para compartir con compañeros en un almuerzo “a la canasta”, lo que significa que cada asistente lleva algo para compartir con los demás. Me parece una forma de socializar muy enriquecedora ya que despierta curiosidades, cumplidos y múltiples intercambios entre quienes participan, no tiene un límite en cuanto a sabores y texturas por lo que abre la posibilidad de tener nuevas experiencias gustativas. Mi receta partió de la idea de preparar un Baba Ganoush, pero me faltó un ingrediente fundamental que no pude conseguir a tiempo así que prefiero llamarle “pasta de berenjenas ahumadas” porque incluye y a la vez excluye diferentes matices de sabor. Es super fácil de hacer y lleva muy poco tiempo. No te la pierdas!!! |
WHAT WILL YOU NEED? // QUE VAS A NECESITAR?

3 large eggplants. 2 cloves of garlic. 2 or 3 teaspoons of ground cumin. 2 teaspoons of sweet paprika. 1 teaspoon salt. Black pepper to taste. 4 tablespoons of olive oil. Juice of 2 lemons. (If you want to make a traditional baba ganoush you should add 2 tablespoons of Tahini). | 3 berenjenas grandes. 2 dientes de ajo. 2 o 3 cditas de comino molido. 2 cditas de pimentón dulce. 1 cdita de sal. Piminta negra a gusto. 4 cdas de aceite de oliva. Jugo de 2 limones. (Si quieres hacer un baba ganoush tradicional debes agregar 2 cdas de Tahini.) |
AND NOW WHAT? // Y AHORA QUE?
We'll put the eggplants directly on the stove top on high heat. Stay attentive and turn them as you notice the bottom of the eggplant softening it will take you about 10 minutes per eggplant.
(If you want to make traditional baba ganoush, cook them in the oven).

Pondremos las berenjenas directamente en la hornalla de la cocina a fuego fuerte. Quédate atento y gíralas a medida que notes que se va ablandando la parte inferior de la berenjena te llevará unos 10 minutos por cada berenjena. (Si quieres hacer baba ganoush tradicional, mejor cocínalas al horno). |
To achieve the smokiness, place the eggplants in a bag and seal it tightly. Let stand for about 10 minutes.
(For traditional baba ganoush skip this step).
After 10 minutes you will see how it opens easily with a knife being able to access all the flesh.

Para lograr el ahumado coloca las berenjenas en una bolsa y cierrala bien. Reposa unos 10 minutos. (Para el baba ganoush tradicional saltéate este paso). Pasados los 10 minutos verás como se abre fácilmente con un cuchillo pudiendo acceder a toda su carne. |
With a spoon extract all the pulp from the eggplant.
Prepare all the condiments.
Pour the pulp along with all the seasonings into the food processor jug and process until a puree texture is achieved.

Con una cuchara extrae toda la pulpa de la berenjena. Alista todos los condimentos. Vierte la pulpa junto con todos los condimentos en la jarra de la procesadora y procesa hasta lograr textura de puré. |
💟 To share with my colleagues, besides the eggplant paste, I prepared a delicious MASA MADRE BREAD 🥖.
Lunch was delicious, there were avocados, tomatoes, sautéed cauliflower, olives, falafels, fruits ... 🥑 🍅 🍌 🍊 A feast of flavors!
None of it made it into the photo, but later we realized it and took one of the group. Those little colorful llamas are a souvenir brought back by a fellow traveler from a trip to northern Argentina.
