Today I shared with you a recipe that I've been wanting to try for a long time, these bagels have gained a lot of popularity here in Argentina and Uruguay in the last few years. Of Polish origin back in the seventeenth century, Bagels became popular among the Jewish community, in the nineteenth century came to London to travel with emigrants to North America.
The most common way to eat them is stuffed, commonly with cream cheese and salmon, or for breakfast with ham, cheese and egg.
These circular shaped rolls with a hole in the middle have a consistent texture and a slightly crunchy crust. Before baking, they are painted with egg and sprinkled with sesame seeds, among other options, which happens to be the Topic of this week's QURATOR'S HIVE TOP CHEF, which is why I decided to take the opportunity to participate and try them once and for all.

Hoy les compartité una receta que hace mucho tiempo tengo ganas de experimentar, se trata de estos panecillos que en los últimos años han ganado mucha popularidad aquí en Argentina y Uruguay. De origen Polaco allá por el siglo XVII, los Bagels se popularizaron luego entre la comunidad judía, en el siglo XIX llegaron a Londres para viajar con los emigrantes hacia America del Norte. La forma más habitual de comerlos es rellenos, comúnmente con queso crema y salmón, o para el desayuno con jamón queso y huevo. Estos panecillos de forma circular con un agujero en el medio son de textura consistente y corteza ligeramente crocante. Antes de llevar al horno se pintan por encima con huevo y se les espolvorea, entre otras opciones, semillas de sésamo que casualmente es el Topic del QURATOR’S HIVE TOP CHEF de esta semana, razón por la que definí aprovechar la oportunidad para participar y probar de una vez hacerlos. En esta oportunidad me incliné por una receta de Bagels con MASA MADRE. A continuación les enseño el paso a paso. |

500gr of flour. 150gr of sourdough. 15gr of fresh yeast. 10gr of salt. 30ml of oil. 20gr sugar. 1 egg. 200gr water. 1 teaspoon of baking soda. Black and white sesame seeds, quantity needed. | 500gr de harina. 150gr de masa madre. 15gr de levadura fresca. 10gr de sal. 30ml de aceite. 20 gr de azucar. 1 huevo. 200gr de agua. 1 cdita de bicarbonato de sodio. Semillas de sésamo negro y blanco, cantidad necesaria. |

In a bowl place the flour and add the salt, sourdough and sugar.

Dissolve the yeast in the warm water and pour it into the mixture along with the oil to form a dough.

Knead until a uniform dough is formed and let it rise for 40 minutes or until it doubles in volume.

Divide the dough into 8 portions and form buns.

With a finger make a hole in the middle to form a ring.
Leave to rise for 20 minutes until doubled.

Place the baking soda in a pot of boiling water and pour the bagels, cook 1 minute on each side.

En un recipiente con agua hirviendo coloca el bicarbonato de sodio y vierte los bagels, cocina 1 minuto de cada lado. |
Spread them on a plate with greaseproof paper and brush them with the egg.

Add the sesame seeds and bake in a medium/high oven for 30 to 40 minutes.

To replace the egg in the baking of our breads we can use cornstarch dissolved in water, vegetable margarine, vegetable oil or vegetable milk.// Para reemplazar al huevo en la cocción de nuestros panes podemos utilizar fécula de maíz disuelta en agua, margarina vegetal, aceite vegetal o leche vegetal.
