Hello foodies!
Have you ever tried stir fry pare? Do you know what pare is? I don't know the English name. When i googled it, its name is bitter gourd. That's right, it's that bitter vegetable. I have my own method to make the bitter taste less. I learned this method from my grandmother when I was a teenager. The bitter taste does not go away, but lessens.
So, this time I want to share that method with you. Are you guys interested? This time I cooked it mixed with anchovies. Why did I mix it with anchovies? Because it will taste better. Okay, let's get started!
3 Pare (Bitter gourd)
4 cloves of Shallot
2 cloves of Garlic
3 1/4 tablespoon salt
1/2 teaspoon Powdered broth
1 teaspoon Sugar
200 gram Anchovies
Cooking oil
Chilies (According to your taste)
STEP 1
Cut the end of the pare, then split and remove the seeds.
STEP 2
thinly slice the bitter gourd. After that add 3 tablespoons of salt and stir and knead until the water from the bitter gourd comes out (This is the method I told you above)
STEP 3
Discard the water and then wash the bitter gourd until clean.
STEP 4
Wash and fry the anchovy until crispy.
STEP 5
Chop the onion, garlic and chili. After that, saute the onion and garlic until fragrant. Then add the chilies and stir fry together.
STEP 6
Add the bitter gourd and spices and mix well.Add a little water to allow the flavors to infuse. After the parenya is tender and the spices are absorbed, add the anchovies and mix well.
STEP 7
Turn off the stove and serve stir-fry on a plate.
