HOMEMADE PORK TOCINO

Good day everyone, we all know that breakfast is very important meal and tocino is one of our delicious breakfast treat. That's why I made our own tocino for our daily breakfast and It’s so easy to make at home, you’ll never have to buy it again. For my own convenience I used a tocino marinade mixture, I used 120 grams of tocimo mix in a 1 kilogram of pork.

Tocino is typically a cured meat, may it be pork, beef or chicken. The more popular kind of tocino is sweet. I like using pork shoulder because it’s meaty, and yet it has enough fat to keep the pork from getting dried out. If you want something fattier, pork belly will work and cut the pieces in thin even slices to make sure all the meat marinades evenly.

Mix or combine the tocino mixture into the sliced meat in a bowl. Mix using the hand, use hand gloves to avoid stains. Mix for several minutes to an hour, mix until well blended and marinade it for 12-24 hours or more.

When cooking tocino, use a pan large enough so that the tocino is flat against the surface in one layer and add just enough water to just about cover the meat. This helped with cooking the meat evenly and helped with reducing the amount of time for braising.
After the water cooks down, stir the meat constantly and do not leave the pan unattended. The sugars in the marinade caramelize very quickly and you want to watch over the tocino to prevent burning.
