HOMEMADE ATCHARA (PICKLED PAPAYA)

Good day everyone, today I have another post to share to you but this time it is a kind of a an appetizer made from pickled green papaya. Commonly known in our country as "ATCHARA" or "ATCHARANG PAPAYA" soaked for a week in cooked vinegar and sugar mixture with onions, ginger and carrots but some atchara were added with garlic, peppercorn, and red bell pepper. But this is my style of cooking it, hope you like it.

My simple ingredients:

4 cups of Green papaya or unripe papaya(grated/julienned)
2 ginger (sliced)
2 onion (sliced)
2 carrots (sliced)
2 cups of refined sugar
2 cups of vinegar

Add some salt then mix until the salt is well distributed and let it rest for 2 hours. Place the grated papaya in a strainer then rinse with running water until all the melted salt and some liquid or juices of the grated papaya will washout and then air dried for 6 hours.


AIR DRIED GRATED PAPAYA

Then combine or mix all the ingredients except the grated papaya in a pan an simmer it for at least 15-20 minutes in a medium heat.

Lastly add the grated or julienned papaya off fire the mix them will. Then let the atchara cool down before transferring it in a bottle.
