Traditional South Indian Semolina Drink

Indian sweet and dessert mainly contains dairy products, and it is always a challenge to replace dairy products to make it vegan. Some recipes are easy to transform into vegan, but some are very difficult. Today here I made a South Indian quick dessert known as Semolina Drink or can say Semolina Kheer.

Kheer is an Indian dessert made of dairy milk and grain (like rice etc) but it is very easy to make it vegan. Here I took flavoured soy milk in place of dairy milk and outcome was amazing! The best part is it is very easy to prepare and can be made in few minutes.



Here is the recipe

Ingredients

  • Soy or any plant based milk 4 cups (I used flavoured and sweetened soy milk)
  • Semolina 4 tsp
  • Sugar 4 tsp or according to taste
  • Dry fruits like cashew, raisins etc 2tbsp
  • Vegetable oil 1 tbsp (here I used coconut oil)

Procedure

  • Just heat oil in a pan and sauté dry fruits for a minute, keep aside.

  • In a heavy bottom sauce pan, add soy milk, Sugar, and Semolina.
  • Mix well and bring it to a boil.
  • Simmer for a couple of minutes and add dry fruits.

Your quick dessert Semolina Drink is ready to serve. As its consistency is liquid, so I served in glasses.

It can be served hot as well as chilled, in both conditions it tastes delicious. I served it in lukewarm state, as we avoid having cold stuff.
