ChenteFood | Spicy vegetable stew with noodles

ENGLISH

There are days when I feel like cooking and without any recipe to guide me, I just experiment with whatever is in the kitchen.

Although basically, this is what I get to do every time I cook because I never know what I have on hand and this always forces me to do some last-minute shopping. Yes, I know. I have to learn to get more organized.

But sometimes, this lack of planning results in some not too unpleasant results, especially this day, when using spontaneous culinary alchemy I managed to reproduce a flavor that I had not tasted for years and it took me back to my childhood.

A Warning

This is not a recipe. I don't expect you to believe that anything I did was actually planned. Because seriously, it wasn't, so what I'm going to tell you below is nothing more than arbitrary and "a pepa de ojo" (I don't know how to translate this, sorry. I'm trying to say that every I used was measured with my sight) amounts of everything I got in the cupboard.

A saber,

  • Papas
  • Ocumo
  • Ñame
  • Zanahoria
  • Auyama (Calabaza)
  • Cebolla
  • Ajo
  • Cilantro

What do we have here?

I explored every nook and cranny of my fridge and found a bunch of fresh root vegetables. Plus some spices and a cube (dehydrated chicken broth).

I have,

  • Potatoes
  • Ocumo (American taro)
  • Yam
  • Carrot
  • Auyama (Pumpkin)
  • Onion
  • Garlic
  • Coriander

Paso 1

Step 1

The first thing we must do is wash, peel and chop all our vegetables. The size depends on how you like to eat them. But also on the way you cook them. The smaller they are, the faster they cook and the easier they are to eat. But as you can see, I like the bigger pieces. So I left them this way.

Once you have everything ready, bring water to boil (or do it before chopping to save time) and put all the vegetables in it.

Paso 2

Step 2

Now we chop the onion and chili. By the way, I found a few tomatoes and I couldn't resist their sweet and slightly sour taste.

I explained in the title of this post that it was a spicy broth, but that was a surprise to me. So be careful to choose well the peppers you are going to use.

6.png

And the surprises keep coming. Suddenly my wife told me that there was some bacon hidden somewhere and I said to myself let's go for it!.

Believe me, I was convinced that I was going to eat a very healthy soup. But I can't live without the fat.

7.png

At this point, everything is sautéed. I don't know if it has anything to do with it, but the cooking order I chose started with the bacon. The idea was to use all the oil it releases to soak into the rest of the vegetables.

8.png

No one can resist the smell of bacon in the pan. And here I was greeted by this pair of charmers, attracted by the sweet aroma. I don't blame them, but no matter how tender they are, I didn't give them any of my bacon. Maybe next time.

Sorry, girls.

Paso 3

Step 3

Next, add the cube (dehydrated chicken broth) to the pot and the sautéed vegetables with the bacon. Stir well so that the flavor is dispersed.

At this point, you can add salt and pepper to taste. But be careful, the tubers absorb the flavors. So you should wait, and then correct if necessary.

It's noodles time!

I asked myself How can I properly complete this broth? and the answer came as fast as my stomach growling. I grabbed my bicycle and ran to buy some noodles. Believe me, if I wasn't Venezuelan, I would have liked to be born in Asia, maybe Japan or something like that XD

And of course, a good touch of soy sauce, because it can always get better.

Make sure the vegetables are almost ready when you put the noodles in. That way everything will be just right. But if you wait until the vegetables are already fully cooked when you decide to use the noodles, then the broth may become thick as the vegetables fall apart. This is the way it turned out for me, but it was not unpleasant at all, I assure you.

11.png

The final touches

All that remains is to chop the coriander and throw it into the water. But do this when the soup is almost ready. If you leave them too long, the broth can become a bit bitter. Or so an aunt told me and I didn't want to contradict her haha.

Finally, the dish was ready.

When I was little I was given one of those instant soups. It was spicy chicken noodle soup. You don't know how much I enjoyed that soup.

It is one of the happiest memories of my childhood. And today, this broth was very, very similar. The taste, the spiciness, and the noodles transported me back to my childhood. I ate about four bowls and couldn't move all day. But it was worth it...

ChenteFood.gif

By the way, I didn't use the pumpkin. I actually forgot to chop it and well...

But look at me, I didn't miss it at all.

I hope you liked it and I invite you to give free rein to your creativity and spontaneity from time to time.

Thanks for reading me!
