I always hear people who have difficulty coping with gluten intolerance because most of the preparations that are part of breakfast or snack are made from wheat flour. This, in the case of children is more difficult, since those who can not consume wheat for some health condition, see around how others can eat delicious things at recess, birthdays and snacks. That's why today I bring you a gluten-free recipe, easy to make so you can pamper those little kids at home.
1 taza de almidón de maíz (maizina)
1 taza de harina de arroz
3/4 taza de azúcar pulverizada
1 cucharada rasa de polvo de hornear
3 yemas de huevo
1 taza de margarina sin sal
3 cucharadas de agua
Para rellenar:
dulce de leche (cajeta, arequipe)
coco rallado
1 cup corn starch (maizina).
1 cup of rice flour
3/4 cup powdered sugar
1 level tablespoon of baking powder
3 egg yolks
1 cup unsalted margarine
3 tablespoons water
For filling:
salted caramel sauce
grated coconut
Coloca en un recipiente todos los ingredientes en polvo previamente tamizados (almidón de maíz, harina de arroz, polvo de hornear, azúcar pulverizada) y mezcla bien. Agrega las yemas de huevo y con ayuda de un tenedor, incorpóralas bien con los demás ingredientes del envase.

Place all the previously sifted powdered ingredients (corn starch, rice flour, baking powder, powdered sugar) in a bowl and mix well. Add the egg yolks and with the help of a fork, incorporate them well with the other ingredients in the container.

Incorpora la margarina, con ayuda de un tenedor une de forma que quede una mezcla de aspecto arenoso, una vez logrado esto agrega las 3 cucharas de agua y amasa ligeramente con la mano hasta obtener una masa homogénea.

Sobre una superficie plástica (silk pack) espolvorea un poco de almidón de maíz, coloca una porción de la masa elaborada y con el rodillo con golpes suaves ve aplanando hasta tener una masa uniforme de medio centímetro de espesor.

Paso 4
Con un cortador de galletas, procede a realizar círculos presionando contra la masa. Retíralos con cuidado y colócalos en una bandeja de metal previamente engrasada y hornea por 30 minutos a 180º.

Una vez horneados, coloca cada galleta sobre una rejilla y deja enfriar muy bien. Cuando las galletas estén frías unta su interior con dulce de leche y coloca en la parte de abajo otra galleta, como si fuese un sandwich, presiona ligeramente para que el relleno se distribuya uniformemente. Con ayuda de un cuchillo punta roma retira el exceso de relleno de los bordes y luego estos bordes que quedan húmedos se pasan por coco rallado.

Un dato muy importante es que estas galletas no deben quedar doradas. La única parte que queda dorada levemente es la cara que está en contacto directo con la bandeja de hornear.
Si eres intolerante a la lactosa, puedes rellenar con dulce de leche elaborado con leche de almendras o soya, azúcar y bicarbonato.
Si eres muy goloso, los alfajores los puedes rellenar con mantequilla de maní y bañarlos con cobertura de chocolate...son toda una locura 😋😋😋
A very important fact is that these cookies should not be browned. The only part that is lightly browned is the side that is in direct contact with the baking sheet.
