Greetings friends who love good food! Today I would like to share a recipe that I have made with a lot of love for my family, an orange sponge cake with arequipe topping. Join me in this step by step of flavours.
I like to please my family members with their favourite flavours, this time the cake is for my mother who loves this combination.
Ingredients:
2 oranges
250 grams leavening wheat flour
1.20 grams of baking powder
1.20 millilitres vanilla essence
80 millilitres of melted sugar cane panela sugar
50 millilitres of soybean oil
100 grams arequipe or dulce de leche criollo
2 eggs
Let's talk a bit about the ingredients, orange is a great source of vitamin C, it brings a sweet taste to our desserts so it reduces the amount of sweetener to use. Oranges are my favourite fruit, they have a lot of calcium and soluble fibre.
As for sugar cane panela, if we can get dark-coloured criolla it is the best, it has a high content of phosphorus, calcium and prevents tooth decay, it strengthens bones. Personally it is my trusted sweetener, at home we do not consume processed sugar.
We are going to take the oranges, cut them in half and with the help of a juicer, we are going to squeeze out the juice and pass it through a sieve. Set aside.
Separate the egg whites from the yolks. To beat the egg whites until stiff, then add the yolks and continue beating until a yellow cream is formed.
Add the ingredients one by one: the orange juice, the baking powder, the vanilla essence, the oil, the melted panela, and the flour that we are going to pass through a fine sieve to sift it.
Beat with encircling movements on medium speed of the mixer so as not to lose the air that we incorporated into the mixture when we beat the eggs.
Place a piece of waxed paper in a baking dish and add the mixture.
Bake in an electric oven at 350 degrees for 18 minutes. Check with a skewer stick on the edges and in the centre, if the stick comes out clean the cake is well baked.
Remove from the mould with the help of the paper in a matter of seconds, it does not stick and is very practical. Leave the cake to cool for a few minutes.
When it is cold, open it in half with a long knife that makes a single cut. Fill with arequipe, close and cover the whole cake with the arequipe. I recommend arequipe criollo as it is less sweet and handmade, so its flavour is delicious. Serve with a cup of coffee.
This preparation is very simple and does not require many ingredients. The cost of an orange sponge cake with arequipe topping of 250 grams for 6 portions is 4$, and we will have enough ingredients to prepare 3 times more.

¡Saludos amigos amantes de la buena comida! Hoy me gustaría compartir una receta que he hecho con mucho cariño para mi familia, un bizcocho de naranja con cobertura de arequipe. Acompáñenme es este paso a paso de sabores.
Me gusta complacer a los miembros de mi familia con sus sabores favoritos, esta vez el biscocho es para mi madre que le encanta esta combinación.
Ingredientes:
2 Naranjas
250 gramos de harina de trigo leudante
1.20 gramos de polvo para hornear
1.20 mililitros de esencia de vainilla
80 mililitros de panela de caña de azúcar derretida
50 mililitros de aceite de soya
100 gramos de arequipe o dulce de leche criollo
2 huevosHablemos un poco de los ingredientes, la naranja es una gran fuente de vitamina C, aporta un sabor dulce a nuestros postres por lo que reduce la cantidad de endulzante a utilizar. La naranja es mi fruta favorita, tienen una gran cantidad de calcio y fibra soluble.
En cuanto a la panela de caña de azúcar, si podemos conseguir criolla de color oscuro es la mejor, tiene un alto contenido de fósforo, calcio y evita las caries, fortalece los huesos. En lo personal es mi endulzante de confianza, en casa no consumimos azúcar procesada.
Vamos a tomar las naranjas, cortamos a la mitad y con ayuda de un exprimidor, vamos a sacar el zumo y pasamos por un colador. Reservamos.
Separamos las claras de las yemas. Para batir a punto de nieve las claras, luego agregar la yemas y continuamos batiendo hasta formar una crema amarilla.
Comenzamos a agregar uno a uno los ingredientes: el zumo de naranja el polvo de hornear, la esencia de vainilla, el aceite, la panela derretida, y la harina que vamos a pasar por un colador fino para tamizarla.
Batimos con movimientos envolventes en la velocidad media de la batidora para no perder el aire que incorporamos a la mezcla cuando batimos los huevos.
En un refractario, colocamos un trozo de papel encerado y agregamos la mezcla.
Llevamos al horno eléctrico a 350 grados por 18 minutos. Revisamos con un palito de brochetas en los bordes y en el centro, si el palito sale limpio el bizcocho estará bien horneado.
Sacamos del molde con ayuda del papel es cuestión de segundos, no se pega y es muy práctico. Dejamos enfriar el bizcocho unos minutos.
Cuando esté frío, abrimos a la mitad con un cuchillo largo que de un solo corte. Rellenamos de arequipe, cerramos y cubrimos todo el biscocho con el arequipe. Recomiendo que sea arequipe criollo ya que es menos dulce y de fabricación artesanal por lo que su sabor es delicioso. Servimos acompañado de una taza de café.
Está preparación es muy sencilla y no requiere de muchos ingredientes. El costo de un bizcocho de naranja con cobertura de arequipe de 250 gramos para 6 porciones es de 4$, y vamos a tener ingredientes de sobra para preparar 3 veces más.
