I present myself in this opportunity to share with you, this recipe for delicious well caseritas soy milanesas. I hope you like it!
Ingredientes:
- 1 taza de porotos de soja.
Lo primero que debemos hacer, que de hecho es el paso más importante, será verter en un Bowl una taza de porotos de soja junto a tres tazas de agua. Esto lo vamos a dejar hidratar durante toda la noche para aprovechar todas las propiedades de los mismos y de paso ablandarlas para que se cocinan más fácilmente. El siguiente paso enjuagar muy bien los porotos que dejamos previamente hidratando y llevarlos a una cacerola con abundante agua a hervir durante 2 horas aproximadamente. Es bastante tardado pero deben quedar super super blandas para que no haya dificultad a la hora de procesar. Una vez que la soja esté bien cocida vamos a dejarla reposar durante algunos minutos y luego vamos a procesar los granos. En caso de no contar con una procesadora eléctrica podemos utilizar un pisapapas para lograr la pasta de soja que necesitamos, por esto es importante que queden bien blandas luego de la cocción. Luego vamos a pasar nuestra preparación a un bowl y llegó la hora de condimentar. En este caso yo utilice un poco de sal marina, perejil deshidratado, pimentón ahumado, una pizca de comino y un chorrito de salsa de soja. También agregamos la cucharada bien colmada de mostaza y mesclamos todo para que se integre. De seguro, la mezcla quede algo chirlosa, es ese caso vamos a ir agregando de a una cucharada de harina integral hasta conseguir una consistencia manejable y que no se desarmen. Para el rebosado, vamos a coger 3 recipientes. En el primero verteremos harina común, en el segundo vamos a batir los 3 huevos y en el tercero el pan rallado. A éste último le vamos a agregar los 3 dientes de ajo picados y el perejil para darles a las milanesas aún más sabor. Por último vamos a pasar nuestra preparación por cada recipiente directo a una placa para horno y cocinaremos por 15 minutos vuelta y vuelta. Y listo! A disfrutar de estas delicias. The next step is to rinse the beans very well that we previously left hydrating and take them to a saucepan with plenty of water to boil for approximately 2 hours. It is quite time consuming but they must be super super soft so that there is no difficulty when processing.
Once the soybeans are well cooked, we are going to let it rest for a few minutes and then we are going to process the grains. If we do not have an electric processor, we can use a potato masher to obtain the soybean paste we need, for this it is important that they remain soft after cooking.
Then we are going to pass our preparation to a bowl and it is time to season. In this case I used a little sea salt, dehydrated parsley, smoked paprika, a pinch of cumin and a splash of soy sauce. We also add the well heaped tablespoon of mustard and mix everything so that it is integrated.
Una vez que tenemos la preparación como la queremos, separaremos bollitos y estiraremos dandole forma de milanesas.
For sure, the mixture will be somewhat squeaky, in that case we are going to add one tablespoon of whole wheat flour until we get a manageable consistency and that they do not fall apart.
Once we have the preparation as we want it, we will separate buns and stretch into breaded form.
For the overflow, we are going to take 3 containers. In the first we will pour common flour, in the second we are going to beat the 3 eggs and in the third the breadcrumbs. To the latter we are going to add the 3 minced garlic cloves and the parsley to give the milanesas even more flavor.
