I'm here today to share with you this super easy and inexpensive recipe for green zucchini milanesas and mixed puree. I hope you like it!

Ingredients for the puree: Bien, lo primero que haremos será preparar los zapallitos verdes. La idea es dejarles la cáscara para que ésta los ayude a conservar su forma, por lo cual, sólo vamos a retirarles las partes donde la cáscara esté media fea. Los lavamos bien y luego los cortaremos en rodajas de 1 centímetro aproximadamente. Conservamos. We wash them well and then we will cut them into slices of approximately 1 centimeter. We conserve. Luego vamos a preparar 3 recipientes. En uno vamos a poner abundante harina. Y luego vamos a pasar las rodajas de los zapallitos por cada recipiente en ese orden. And then we are going to pass the zucchini slices through each container in that order. Los pondremos en una placa para horno y dejaremos cocinar por aproximadamente 20 minutos de cada lado, a 170°. Para el puré vamos a quitarle la cáscara a la calabaza y a la papa le dejaremos la piel para que el puré sea más rústico y tenga textura. Cortaremos la calabaza y las papas es cubo, cortaremos a la mitad 2 dientes de ajo y pondremos en una cacerola con agua a hervir hasta que todo esté bien bien blandito. We will cut the pumpkin and the potatoes in a cube, we will cut 2 cloves of garlic in half and put in a saucepan with water to boil until everything is very soft. Cuando este todo bien cocido, retiramos del fuego y colamos el agua. Como quiero que mi puré sea rústico, en vez de procesar, vamos a aplastar todo con un pisapapas. Por último agregamos todo el queso cremoso que creamos merecer jajajs y listo! Since I want my puree to be rustic, instead of processing, we are going to mash everything with a potato masher. Finally we add all the creamy cheese that we think we deserve hahaha and voila!
Ingredients for the Milanese:
Well, the first thing we will do is prepare the green zucchini. The idea is to leave them the shell so that it helps them retain their shape, therefore, we are only going to remove the parts where the shell is half ugly.
En otro vamos a batir 3 huevos y condimentaremos a gusto. Yo utilicé sal, pimienta y pimentón ahumado.
Y en el último pondremos el pan rallado. A éste le vamos a agregar 2 o 3 dientes de ajo picados y un poquito de perejil fresco. (Yo no tenía fresco, puse deshidratado pero se queda corto de sabor a comparación).
Then we are going to prepare 3 containers. In one we are going to put plenty of flour.
In another we are going to beat 3 eggs and season to taste. I used salt, pepper, and smoked paprika.
And in the last one we will put the breadcrumbs. To this we are going to add 2 or 3 minced garlic cloves and a little fresh parsley. (I was not fresh, I put dehydrated but it falls short of flavor in comparison).
We will put them on a baking sheet and let them cook for approximately 20 minutes on each side, at 170 °.
For the puree, we are going to remove the skin from the pumpkin and leave the skin of the potato so that the puree is more rustic and has texture.
Luego le vamos a agregar 2 huevos y batimos agregando chorritos de leche hasta lograr la consistencia deseada.
Para condimentar, yo utilicé sal, pimienta, nuez moscada y romero.
Es un plato bastante facil de hacer, económico y sobre todo, delicioso.
When everything is well cooked, remove from the heat and strain the water.
Then we are going to add 2 eggs and beat adding squirts of milk until we achieve the desired consistency.
To season, I used salt, pepper, nutmeg, and rosemary.
