I believe that there are no coincidences in this world, all things that bind and happen in this world are related to each other. As I experienced with my life in the past few days. At that time, my husband told me he wanted to eat beef tengkleng. He told me, back when he was still in college and several times to Java Island when he exchanged students with universities there. Tengkleng is his favorite food.

I've only cooked beef tengkleng once and that happened several years ago. I know the recipe for tengkleng, because I am a Javanese woman and my grandparents are from Solo, East Java. We often cook this dish if we get beef rations at the moment of Eid al-Adha. Tengkleng is a soup-like dish made from ribs or other bone parts from cows or goats. According to my grandfather, tengklek was made by people in the past because the price of meat was expensive and could only be bought by the rich, colonizers or nobles.

Therefore, the people can only buy ribs or bones that are not liked by the rich and process them into a delicious dish. Nowadays, Tengkleng is enjoyed by all people, no matter the rich or poor, everyone loves this food.

I said to my husband, if he wanted me to make tengkleng. He had to buy the shortribs himself into the market. I didn't find it difficult to cook the dish, but to get short ribs, it meant that I had to go to the market in the morning because at this time the meat section was a popular and preferred cut of meat. I did not think, it turns out that my husband's intention is to eat tengkleng. He took the time to get up early in the morning and buy ribs. Finally, I couldn't resist and cooked it.

Tengkleng Short Ribs
The Recipe


The most important thing before making tengkleng short ribs, prepare some simple ingredients, don't forget to wash the utensils and ingredients with running water. Making tengkleng short ribs is quite easy, prepare the following ingredients:


Ingredients:

  • 1 kg of short ribs
  • 5 – 10 pcs red chili (adjust your spicy taste)
  • 4 cloves of red onion
  • 5 cloves of garlic
  • Lemongrass, turmeric, ginger and galangal
  • 1 pc tomato
  • 5 pcs candle nuts
  • 3 pcs lime leaves
  • 3 bay leaves
  • 1 pcs scallion
  • Soy sauce
  • Tamarind
  • 2 liters of water
  • Salt and sugar for flavoring

*How ​​to make tengkleng short ribs:

  • Boil the short ribs with 2 liters of water over medium heat for 1 hour, so that the short ribs are soft and juicy, adjust to the short ribs you have. Usually when using local Indonesian beef, the short ribs tend to be chewy, so boiling them for a long time is the key to making the short ribs soft.

  • Puree the spices; onion, garlic, candle nut, turmeric and ginger. Puree with a little vegetable oil.

  • Saute ground spices until fragrant, add lemongrass, galangal, lime leaves and bay leaf. Then pour in the short ribs stew.
