Let’s Make Minty Meyer Lemonade!

We woke up to temperatures nearing 80 degrees and since I’ve been refraining from coffee, iced coffee was out of the question. I didn’t feel like tea either but lemonade sounded amazing!
One of my neighbors gifted me some of their Meyer lemons from their garden. These lemons have a less bitter rind, a sweeter juice and almost tastes like a lemon/kumquat mix!

For this deliciously refreshing drink you will need 3 small sprigs of mint, 1 Meyer lemon, 1/2 cup of ice, 1 cup water and a tablespoon of raw sugar or any sweetener of your choice.
I am really thankful to have this Igloo Ice Maker on days like today since my industrial fridge does not have that feature!

You squeeze one half of your lemon and add the juice to your blender along with the other whole half of your lemon. Add the rest of your ingredients and blend until the ice is crushed, granita style and enjoy!
After my lemonade and fruit bowl I went for a walk and came home to rewire a lamp we’ve had for many years and gave it a new place in our dining room.

I think now I will sit down and read a book and work on some projects on my new Cricut cutting machine I’m learning how to use!
