Spicy Green Chilli Squid With Raw Watercress

I can't even resist the spicy taste even though I am a spicy lover. But my husband can finish my spicy food.

What are you cooking today? I asked the question when we both went to the morning market to shop for kitchen supplies. My husband said that he really wants to eat squid.

I also agreed to my husband's request. I just realized it's been a long time since I cooked him squid. Squid is a favorite seafood. While I don't like it. But I will follow his request.

Anyway, for the veggies, I didn't cook veggies this time. But I serve fresh vegetables, fresh Watercress. Because the sauce is very spicy, it is better to serve raw veggies.

I use the shoots of Watercress so their flavor isn't as strong as the leaves on the lower stems.




Crazy Spicy Green Chilli

I will tell you a funny incident that I experienced. I actually really like spicy. But it turns out I'm not the champion. My husband is a spicy champion.

That's evident from the food I cooked this time. I made a mistake. I made the green chili puree too soft because I used a blender. Usually I just use a traditional pestle to make green chili sauce.

Because of this texture error, the sauce turns out to be crazy spicy! Even though I added sugar, I couldn't even stand the spicy taste. 🤣

This was an important lesson for me that I should just use a traditional pounder so that the spicy chili doesn't taste crazy 😅😅😅

Back to the topic, the following are the ingredients for green chili sauce:

Green Sauce Ingredients:

  • One handful of green chillies
  • 3 cloves of garlic
  • 5 small cloves of garlic
  • Two tablespoons of cooking oil

The way to make green sauce is to blend all the ingredients. But don't be soft. It's best if there are still green chili flakes left and that's even better.

If you use traditional mortar, mortar and pestle, don't use oil.




Preparing Squid

To cook squid in green chili sauce, we need some ingredients below:

  • 250 grams of squid
  • 6 kaffir lime leaves
  • 1 teaspoon salt for boiling squid
  • 1/2 teaspoon salt for seasoning
  • 1/2 teaspoon sugar

Clean the squid, and here I only use the body of the squid. For the head of the squid, I gave it to cats without owners who were hungry and came to my house.

We can slice the squid in a ring-like shape, or we can also follow the shape I did. I sliced the squid in the middle of their bodies so they would have a wider shape.

The wide slice shape like mine is also suitable for those of you who want to make crispy fried squid.

After that, don't forget to wash the squid clean again. You can add lemon or lime. But for fresh stock, you don't need to do that. That's why we should use fresh stock not from the refrigerator because they will change the smell. This is different from fish which will not change its aroma if frozen. That's also why I never freeze any type of squid, even for emergencies.




Cooking Squid

Boil Squid

Bring water to a boil. Then add one spoonful of salt and 3 kaffir lime leaves. Then enter the squid. And cook them for 5 minutes in a closed pan.

Cook Sauce

Cook green chili with 3 kaffir lime leaves. Add a little water to taste. Then cook the green chili sauce until the strong aroma of the chilies disappears.

Then add boiled squid. Also add salt and sugar. Cook them until simmer and remove from heat.

I served spicy green chili squid with rice and raw watercress. Honestly, this is for my husband's lunch. Meanwhile I chose to only eat tofu 🤣

I couldn't even handle the spicy taste of the green chili sauce. While my husband can even casually finish all the squid! It was absolutely crazy, crazy spicy!
