Plant-Based Mashed Sweet Potatoes Recipe

The exploration of staple food recipes from ingredients sweet potatoes is still ongoing. I'm starting to get bored with boiled and baked sweet potatoes.

Suddenly I thought of making mashed sweet potatoes. I dared to try this recipe because I have done research on recipes on the internet and they use the same method I think. The research is only to confirm that what I cook later is not something strange.

Things Different From My Recipe?

In most of the recipes I have come across, they use animal-based milk cream. In my recipe, I use coconut milk.

The process of grate coconut to make coconut milk with a traditional coconut grater.


Coconut milk has a nice aroma compared to animal-based milk.

So in my opinion, the use of coconut milk is something different and has its own character that is worth trying.

The Ingredients

  • 250 grams of boiled sweet potatoes
  • 50 ml of coconut milk, the thicker the better, but not as heavy as the creamy texture.
  • 2 tablespoons of plant-based butter
  • Salt to taste.
NOTE: If later the texture is soggy in your opinion, you can add another measure of sweet potatoes according to the texture you want.



COOKING INSTRUCTIONS

- Step 1

Boil the sweet potatoes with a pinch of salt. Cook until sweet potatoes are soft. Remove and drain the boiled sweet potatoes until the water is not left.

- Step 2

Prepare a saucepan. Add coconut milk, butter, and a pinch of salt. Cook the mixture. Stir well until the butter melts. Turn off the fire.

- Step 3

Add the coconut milk and butter mixture to the boiled sweet potatoes. Then mash them using a fork. Here I am not using a blender or mixer so the texture is not too mushy and it becomes strange in the mouth if the texture is soggy.

Mashed Sweet Potatoes are ready to serve!

In my opinion, mashed sweet potatoes taste better because they have a sweet, characteristic taste. In contrast to the more bland potatoes. But if the potato is red potato, it tastes better.




SERVE WITH YOUR FAVORITE SIDE DISH

I have tried combining mashed sweet potatoes with a side dish of stir-fried vegetables. And I think it tastes good!

This recipe is the next level of my usual staple food. So I can have lots of healthy staple food alternatives.
