Vegan, keto-friendly freezy chocolates made with coconut oil, cacao nibs and monk fruit sweetener

APPROXIMATE MACROS PER BOMB:

  • carbohydrates: ~2g (NET),
  • fat: ~16g
  • protein: ~1g

Ingredients

  • 1/2 cup coconut oil (melted)
  • 1/2 cup cacao powder
  • 6tsp monk fruit sweetener
  • Salt (1 pinch per)
  • 3tbsp cacao nibs [added 20230210 because I forgot it]

  • 1/2 cup coconut oil (melted)
  • 1/2 cup cacao powder
  • 5tbsp monk fruit sweetener
  • 1/3cup cacao nibs
  • top each with coconut sweetener

Instructions

  • Spray a 12 count muffin pan with coconut oil and set aside.
  • Whisk together the melted coconut oil, cacao powder and monk fruit sweetener and pour the mixture out into the muffin pan. Sprinkle each with a small pinch of salt.
  • Leave the filled tray in freezer until solid (15-20 minutes seems safe). Pop them out and store in the freezer until you are ready to eat.
