Les saludo comunidad @foodiesbeehive, es mi primera publicación con ustedes y les comparto una receta muy sencilla, deliciosa y fácil de preparar. ¡Si te gusta la pasta la amaras!
El capítulo de hoy se titula: vestida de amarillo. Vayamos al paso a paso:
½ auyama o calabaza
1 cebolla pequeña
3 ajíes dulces y 1 picante 😁
3 dientes de ajo
1/2kg de pasta de tu preferencia
Sal y pimienta
2 hojas de laurel
Lavamos, pelamos y picamos las auyamas –calabazas-, la colocamos en una vaporera o en una ollita con agua y dejamos hervir hasta ablandar.
Una vez lista sacamos del vapor, en un recipiente le agregamos sal, pimienta, ½ cebolla picadita, 2 ajíes picaditos, 2 dientes de ajo menudito y trituramos formando un puré. Me encanta encontrar los trocitos de la mezcla por eso prefiero hacerlo con un tenedor. Reservamos.
En agua hirviendo colocamos la pasta con un toque de sal y varias hojas de laurel. Estando al dente retiramos del fuego, reservamos parte del agua, colamos con agua fría para detener el proceso de cocción y reservamos.
En la misma olla, colocamos un chorrito de aceite olivo, sofreímos el ajo parte de la cebolla y ají, una vez dorado agregamos el agua reservada de la pasta y esperamos que espese un poco.
En ese punto agregamos el puré de la auyama –calabaza- rectificamos la sal, pimienta, agregamos la pasta y la envolvemos con esta deliciosa y cremosa salsa, dejamos que la salsa la cubra, en ese baile impregnándose de su sabor y aroma.
¡Sencillamente, delicioso!

Today's chapter is entitled: dressed in yellow. Let's go step by step:
½ pumpkin or squash
1 small onion
3 sweet and 1 hot chili 😁
3 cloves of garlic
1/2kg pasta of your choice
Salt and pepper
2 bay leaves
Wash, peel and chop the pumpkins, place them in a steamer or in a pot with water and let them boil until soft.
Once ready, remove from the steam, add salt, pepper, ½ chopped onion, 2 chopped chili peppers, 2 cloves of garlic and mash into a puree. I love to find the little pieces of the mixture so I prefer to do it with a fork. Set aside.
Put the pasta in boiling water with a touch of salt and several bay leaves. When the pasta is al dente, remove from the heat, reserve part of the water, strain with cold water to stop the cooking process and set aside.
In the same pot, add a drizzle of olive oil, fry the garlic, part of the onion and chili, once browned add the reserved pasta water and wait for it to thicken a little.
At this point we add the pumpkin puree, season with salt and pepper, add the pasta and wrap it with this delicious sauce, let the sauce cover it, in this dance impregnating it with its flavor and aroma.
