I had some aubergines in the fridge that were already getting old and, I decided to prepare a sauce and add the seasonings that I had available, well actually there were not many, but as the day dawned rainy I preferred to stay at home and cook with what I found.
3 ajíes dulces
1 ramita de puerro
1 cucharadita de ajo en polvo
Orégano seco (cantidad deseada)
500 ml de jugo de tomate
1 cucharadita de azúcar
Sal y pimienta al gusto
3 sweet peppers
1 sprig of leek
1 teaspoon garlic powder
Dried oregano (desired amount)
500 ml tomato juice
1 teaspoon of sugar
Salt and pepper to taste
🍂 I cut the chili peppers and the leek stem into cubes, then in a cauldron with hot oil, I sautéed them and seasoned them.
🍂Then I added the equally diced eggplants.
🍂 I added the tomato juice so that it covered all the eggplant, you can also add a little water or broth of your choice.
🍂This sauce could not lack a handful of dried oregano to give it a special touch, I tell you that near where my husband works there is a lot of oregano, recently he brought me a bag with a large amount and, I put it to dry I think I'm going to have oregano for a while.😊😊😊
🍂 Then over medium heat and with the cauldron covered, I let it cook until the eggplant was soft and the sauce was reduced so that it took a little thickness.
